I love innovative cuisine, but this was my first time trying innovative sushi, so I couldn't stop being excited.
What I ate this time!

The first three dishes start with special dishes made with seasonal ingredients such as spring cabbage, fresh onions, and sea bream roe.
The boiled pork is topped with chimichurri sauce and is suddenly full of innovation!
It's a taste that you can't get at a normal sushi restaurant.
Botan shrimp frit is served with purple sea urchin and tomato ponzu sauce.
According to the owner, sea urchin is a seasoning.
Fried with rice flour and crispy. Thanks to the tomato ponzu sauce, the aftertaste is quite refreshing and delicious.
It's sushi that I've never eaten before, and it's quite innovative.
Negitoro and sea grape rolls are also quite rare.
The texture of the sea grapes is wonderful and goes well with Negitoro.
This is also a new discovery!
The owner has experience living in Spain, so we were always surprised by the squid ink paella that came out in the middle of the course.
On this day, I didn't talk much with my companion and couldn't take my eyes off the shopkeeper! !
I was able to enjoy it with my eyes as well.
I'm really happy that the drinks are free flow and have a wide variety of alcoholic and non-alcoholic options.
Recommended as you can enjoy sushi at a very reasonable price.

Although there are a lot of them these days, I get the impression that many of our customers are foreigners.
I was looking forward to going to this innovative sushi restaurant.
The dishes come out so quickly that even though there are a lot of items, you can finish the entire course in 2 hours.
The good news is that the menu seems to be slightly different depending on the day, so you can enjoy it no matter how many times you visit.
Also, your unlimited drinks will no longer be in your glass! It was amazing how the staff came right at the right time to ask about the next drink!
In fact, it's so fast that I feel like I'm going to drink too much.
Each dish is beautifully prepared in front of you. Sea urchin appears many times from the beginning to the end!
This is also my first time using pickles pickled in red vinegar as a substitute for gari.
It was unexpected that Aro Caldozo would appear!
Although I ingested quite a lot of rice, it was delicious and I finished it all.

There are two courses available for lunch, and the one I tried was the limited-time Omakase Course (Short) at the reasonably priced [Shimon Raifuku]. 90 minutes of short free flow (all-you-can-drink) including small bowls, 11 pieces of nigiri, makimono, and soup dishes.
The sushi began with a small bowl of Chinese cabbage, sakura shrimp, sea bream, and Japanese black beef, and a side dish with soup stock, followed by pickles instead of gari. From medium-fatty to black meat with yuzu and pepper, Bafun sea urchin and rock salt rock salt, both of which are famous for their beautiful cross-sections. Tuna marinated for 5 days, crunchy golden sea bream. An excellent set of dishes, including hand-rolled shrimp fritto, sea urchin, and tomato jelly reminiscent of Spanish pintxos, refreshing surf clam string, and the unmistakable fatty tuna. Serve it at a sushi restaurant with cold chawanmushi in between! ? The Toyama hotaru squid paella was a surprise. Fluffy conger eel, sweet-tasting sea grapes, and a sweet-like egg finish. Even the lemongrass-scented green tea at the end of the book is excellent.
Free Flow offers a wide selection of standard drinks such as beer, highball, sour, and shochu, as well as Japanese sake and wine. I had 2 types of white and 2 types of red from sparkling, and my husband had 3 types of Japanese sake from white wine.
It's a little high-end for everyday use, but the price is rather reasonable for this satisfying feeling. A truly satisfying 2 hours.
With a calm space based on wood and black, and attentive and courteous customer service, you'll feel comfortable from beginning to end.
We are always fully booked, have many repeat customers, and are very popular with foreigners as well!
Overall, it has become one of my favorite shops and one of the top 10 I've visited in my life. I want to save money and visit again (lol)
