A shop in Azabu Juban run by a couple. Every dish makes use of the ingredients and has a flavor that matches it. My husband and I both enjoyed it and it was delicious. I think it's a good idea to bring your foreign friends as they can speak English as well.

I came to Fukuda, a Japanese restaurant in Azabu Juban.

First, I'll order a bottle of beer.

Boiled zuiki and abalone
We bring out the flavor of the ingredients without using seasonings.

Matsutake mushroom
Yunnan province, China
High quality, about 3 days old.
It seems that tonight's dish will be served using plenty of these large medium-budded matsutake mushrooms.

Uwajima sweet sea bream and matsutake mushroom bowl
We use matsutake mushrooms that have been loosened by hand for a nice texture, and a generous amount of sweet sea bream weighing over 2kg.
The aroma and flavor of the soup stock was amazing.

The alcohol is Hiyaoroshi from Shichiken.

pacific saury from Nemuro, Hokkaido
It is served with green onions, ginger, and shiso leaves.
Although the catch of swordfish was poor this year, we managed to secure some good ones.
The precious saury fish is surprisingly delicious.
The meat was so exquisite that it almost melted but didn't.

Fishing in Abashiri, Hokkaido
Ikatsujime
The aroma and texture are amazing.

The next drink was Hakurakusei's special junmai.

Yamaguchi's Nodoguro
Fried mizuna and matsutake mushrooms
Raining black shichimi
Although it is fatty, it is a superb dish with a light taste.

Fried matsutake mushrooms and new ginkgo nuts
I ate all the matsutake mushrooms tonight and really enjoyed it.
You can enjoy the aroma even when fried.

The last drink was Tojyo by Matsumoto Sawaya.
It was a good sake that goes well with Japanese food.

Grilled eggplant and boiled conger eel
Hidden under the large conger eel was a delicious grilled eggplant.
When you put your chopsticks into the conger eel, the rich scent of roasted eggplant will stimulate your nostrils.
The flavor of the broth oozes out and is extremely delicious.
I drank it all.

Salmon roe and salmon oyakodon
The owner had a clay pot, and the landlady had salmon roe.
I will take a photo of the two of us smiling and serving the food.
I thought they were the best couple.

How soft and delicious is it?
Refreshing salmon and rice
I thought I could eat as much of this as I wanted, so I ordered another.

A unique blend of 4 types of red dashi
Although it doesn't taste like red soup stock, I can really feel the flavor of red soup stock.

fig
Princess Toyomitsu appears in Earl Gray jelly.

Today, four of us had the counter all to ourselves, and we were able to enjoy cooking and conversation right in front of our eyes.
We had a luxurious time with the best hospitality.
