I would like to note that the owner of the store that won the TRY award has since withdrawn from the store. Therefore, it is a completely different store from the beginning.
The restaurant has 6 counters, 4 tables for 2 people, and 2 tables for 6 people. I think it's cash because it's a meal ticket system, but there's also talk that you can pay with a QR code, but that's unconfirmed.
I visited around 12:15 on a weekday in November 2023, and there were empty seats, so I immediately bought a meal ticket and was shown to my seat. This time, I ordered the ``Koku Umi Rich Soy Sauce Wonton Noodles (hand-rubbed noodles)'' for 1,150 yen. The rice bowl was ready in about 5 minutes.
Rich Soy Sauce Wonton noodles (hand-rubbed noodles) are used in this soup, and as the name suggests, it is a jet-black rich soup with a strong soy sauce flavor, but with a slight knotty flavor. It looks salty, but I think it's a good seasoning. I chose hand-kneaded noodles, and they are thick, curly noodles with a thick, thick texture, and I think they go well with the chewy texture of the noodles. The ingredients were wonton noodles, and they consisted of two large pieces of juicy char siu pork about 5mm in size, purple onions, four wontons with thick skin and firm meat, and a piece of seaweed.
It's very well put together. I didn't have the straight noodles, but I think they went well with the hand-kneaded noodles. I thought the ramen was delicious, with each ingredient being of good quality and well-balanced. I think it's a completely unique ramen. Apparently there are a lot of people eating Mazesoba, so I would like to try that too if I have a chance.
