This is truly a hidden gem, small but fantastic restaurant. The chef designs each course which turns out to be innovative kaiseki style cuisine. It’s like eating at a private kitchen with personal chef who puts his heart into each dish.

I had the honor of being invited by a gourmet friend to go to Chisso Torinosu, which is about a 3-minute walk from Exit A3 of Daimon Station on the Toei Subway, at 7pm on weekdays for 8 people.

This store just opened in January 2022, and is located on the second floor, with only a small glowing signboard on the first floor, so it felt like a hidden gem.

Go up the stairs and head to the shop on the second floor♪

A clean white curtain hangs at the entrance, and the plain wooden side door is new and beautiful. As expected, this restaurant has a delicious aura just by looking at the entrance.

When you open the door, the inside of the store is bright and clean, with plain wood and other materials.In the back left corner, there is a tastefully decorated picture of a bird's nest, which is reminiscent of the store's name, and there is an L-shaped counter seating for 8 people. The world of was expanding♪

The young, tall and handsome owner welcomed us with a smile♪
Also, one young woman was very hospitable and served me with a smile.

Seats for this meeting have been decided in advance, and you will sit in the second seat from the left♪

This time it's a food course for 13,200 yen (tax included), drinks are separate♪

I looked at the drink menu and decided to have champagne for 9,900 yen for 4 people.
The other person ordered a small bottle of Premium Malts for 770 yen, and after that, they ordered the sake to be split between the two of them.
There was a wide variety of sake in addition to the menu.
Let's toast and start cooking♪

First of all, water octopus and Junna from Chiba's Sotobo were delivered in a beautiful blue Arita ware bowl♪
This tableware and dish are eye-catching and beautiful!
It was extremely hot that day, so this was especially refreshing and the vinegar was delicious.
It looks like the water octopus has been pounded quite a bit, and this is the first time I've experienced this slightly lumpy and soft texture, and it was truly delicious♪

At this point, the owner takes out something and begins cutting it on the cutting board, but it is a large mackerel stick sushi from the Goto Islands of Nagasaki, and the mackerel is shiny and looks delicious!

It was also great that you could wrap it yourself in a wide sheet of seaweed.
The mackerel was fatty, and the vinegared rice was quite soft and sticky, with a good amount of vinegar.I had never had such delicious stick sushi before!
My friend bought it for 2,500 yen (tax included) as a souvenir from that day, and I thought it was great!
You should buy this as a souvenir! Here it is♪

And here I ordered the sake Ginrei Tateyama special pure rice 880 yen including tax♪
It was great to be able to choose the choko, so I chose a light and stylish one♪
The sake was dry and crisp♪

The owner was frying some tempura, and I was surprised at how big it was.
As I was wondering what it was, I realized that it was a huge bonito!

It was Katsuura's bonito tempura, and it was quite thick and had just the right amount of texture, and the texture matched perfectly with the batter, making it quite delicious!
Of course, this was my first time having bonito tempura, and I was very impressed! !

Next, the owner takes something out of the refrigerator and cuts out something that looks like pork with a nice color and lots of fat.
Not only is the knife beautiful, but the way you insert the knife is also beautiful!
I was surprised to find that this is a wild boar from Himi in Toyama Prefecture!
Of course it's wild game!

I made it into a botan nabe and had it with mitsuba leaves and green onions.It was piping hot and the soup was quite delicious, and the boar fat was quite thick and the meat itself had a chewy texture.I was so impressed by how delicious it was!
This store is so impressive! !

Then, cold salmon roe, funkawan hair crab, tomato, onion, and avocado are served on an interestingly shaped plate, which is also beautiful, and the onions and avocado in particular have a nice flavor, which is also delicious. It's true♪
It goes well with alcohol♪

Next, the cutlass fish from Takeoka in Chiba was grilled over Bincho charcoal, and as expected, the cutlet fish had a wonderful amount of fat, and was of high quality and quite delicious♪

And next time, something was cut off, and I wonder what it is? That's what I thought, but it turned out to be a duck from Iwate Prefecture, and it was a simmered dish with high-quality shito peppers, pumpkin, shiitake mushrooms, eggplant, spinach, and mizuna.It was delicious and calming♪

Also, the miso soup was piping hot, the dashi soup worked well, and the mitsuba leaves were also delicious.

And in the case of a private reservation, two kinds of rice cooked in a large pot are served as a service♪

First of all, it was a rice dish made with black truffles and corn from Tomisato in Chiba, and it was spectacular with plenty of black truffles sprinkled on it♪
There was a nice smell of black truffle in the air, and it was quite delicious along with the sweet corn♪

The other dish was rice cooked with scallops, raw seaweed from Lake Hamana, and mitsuba leaves, which was also piping hot and delicious♪
However, I thought it might be better if the salt was a little more appropriate.

It was also great that I was able to have these made into rice balls and take them home♪
I'm really looking forward to the next morning!

Lastly, there was a dessert called Hassun, which was also beautiful and had a lot of variety!

Specifically, it consisted of the following, and it was wonderful with lots of flowers ♪
I think this is especially nice for women.

・Blueberry and berry champagne jelly
・Mascarpone cheese, raisins, and walnuts
・Cold chestnut zenzai
・Blue cheese and Narazuke
・Warabi mochi with yellow flour
・Almond tofu
・Iced soup sencha

I was very satisfied with piping hot roasted green tea at the end.

The owner then started making delicious-looking tamagoyaki using plenty of oil, and we were able to take out the 1,100 yen egg sandwich as a souvenir.
I would definitely like to order this next time♪
I was jealous of my friends who ordered takeout.

“Chiso Tori no Su” is a bright and clean restaurant where you can enjoy high quality, delicious and surprising Japanese food and drinks.We highly recommend it!

It is a small and quiet shop with 8 seats at the counter. In the evening, you can enjoy creative Japanese cuisine with only courses, and delicious dishes made with the chef's ingenuity. The menu focuses on fish, and the sauces are also creative, giving you new discoveries. The final dessert was filled with many handmade items and was both fun and delicious. This time, I had mixed rice with trout and salmon roe, and the rest was made into rice balls, which I received as a souvenir. It's a monthly menu, so I'd like to visit again 🎵
