I scheduled half a day to go to Mr. Focchio. It's long awaited.
The procurement of ingredients is excellent. The level of cooking is also excellent.
Also, this time for lunch, I was excited because each dish was so luxurious that it seemed like it could be a main dish.
All dishes are cooked to a high standard, bringing out the flavor and sweetness of the ingredients.
Also, is this...Italian...? I was surprised at how far away from the Italian I know, in a good way.
It was a really fun time.

・Salami made in Yamanashi Prefecture using an Italian method
Strong salty taste and richness. It packs a punch. Good acidity too. A delicious start.
・Raw ham
Crispy frites under plenty of prosciutto? (I somehow missed this).
The ham has a distinct salty taste, and the flavor of the pork spreads through, making it delicious. The oiliness of the frites gives a soft and chewy accent to the salty and umami flavor of the ham.
I think it's irresistible for people who drink alcohol.
・Yellowtail
Yellowtail that has been salted and aged for 10 days is served with olive and fish sauce tarpenade (paste) and mandarin orange citrus sauce.
I thought the citrus sauce was used to give it a unique flavor that only comes from aging, but it doesn't feel strange to eat just the tarpenade. The flavor that comes after the aged yellowtail is very good.
Both the tarpnade and the citrus sauce are very delicious, but I wanted to really enjoy the flavor of the yellowtail, so I was wondering whether to add a lot of sauce or use it sparingly. It's my favorite.
・Breath Salmon
Salmon grown for seven years in the natural water of the Alps in Miyata Village, Nagano Prefecture.
Salmon is low in oil and has a simple flavor that brings out the flavor of the fish. It has a strong flavor. The skin, which is accented with crunchy hazelnuts, supports the flavor and texture. Hmm, this is delicious.
The consommé made with raw ham and the herbal tea (?) poured at the end also subtly support the deliciousness of the salmon.
Also, the snap peas from Kagoshima Ibusuki that come with it are extremely sweet and delicious! What is this?
·deer
Venison, beet puree, deer stock, and oysters. Truffles are sprinkled luxuriously. Is red core radish also a secret ingredient? It smells good anyway.
Even while eating, the richness and aroma pass through your nose.
Deer meat is generally bland, so it had a completely different taste, and it was interesting to feel like I was eating a different type of meat.
・Lamb roasted in straw wrapper
Specialty roasted lamb in straw wrapper. I was looking forward to it.
They use hogget meat (12 to 24 months old) from Mr. Shimoda of Obihiro, Hokkaido.
No, this is delicious! The taste of the fat is amazing. It's not boring at all, just delicious. And there was no smell of sheep at all. However, the meat has a strong flavor that is unique to sheep. A wonderful dish that will make you smile when you put the meat in your mouth.
I want to eat more.
The potatoes steamed in the ashes are steamy, sweet, and delicious.
・Tomato pasta
Pasta made with two types of tomatoes: Ryokuken tomatoes from Shizuoka Kakegawa and salt tomatoes from Kyushu (Kumamoto?).
I felt the sweetness, sourness, and umami that balanced with the freshness of the tomatoes. This is delicious too.
I love tomato pasta, so this dish made me very happy. It's always delicious in my mouth and I'm happy.
Sometimes a strong sour taste like an accent? I thought it might be the salted tomatoes that gave it that flavor, but I devoured it in no time.
・Tiramisu
Tiramisu made on the spot. Enjoy with the texture of crunchy almonds and coffee beans.
It's a nice seasoning with a soft sweetness and just the right amount of bitterness from the coffee beans.
If the level of dolce at the end is high, you'll suddenly feel more satisfied.
・Small sweets, coffee
Now, about the after-dinner coffee, I was watching from the counter and they started making hand drip coffee!
I thought this was unusual, so I asked about it, but they were very particular about it.
Apparently, the beans are originally blended by Tombi Coffee in Takasaki.
This medium-dark roasted coffee has a strong body but is easy to drink without much flavor, making it a perfect match after an Italian meal.
I love coffee, and I was happy that the time after the meal was enjoyable.
I had a great time and had a great time with both the selection of ingredients and the cooking.
