    I visited a ramen shop situated in a narrow alley near Opera Street in Hatsudai. Their signature dish is the Niboshi Chuka Soba, priced at approximately 900~1000yen. It features distinctive, thick, and chewy noodles, complemented by a broth enriched with fat, coarsely chopped onions, seaweed, and dried sardine dashi, resulting in an incredible flavor combination.
    The soup contains a substantial amount of fat that, when scooped up, harmonizes perfectly with the onions, creating a subtly sweet and delightful taste without an overwhelming oily sensation. Customers have the option to choose their preferred amount of fat. After savoring the soup, you'll experience a genuine fondness for the fat and dried sardines, and even the seaweed and bamboo shoot are exceptional.
    What sets this place apart is their unique gyoza served with ginger vinegar, a rarity compared to the common soy sauce dip. I will visit this place again and again.

    Really clean and bright ramen shop with a really nice hand-made noodles!
    This shop is specialized on ramen with the back-fat of the pork which gave a really nice flavor to the broth!
    If you can also add as topping the 岩のり(iwanori) a wild harvested seaweed!

    Opened in July 2020 as the 5th store in the Gamushara group.
    I was curious because I received an announcement from the various SNS of Momonoki, who is now part of the same Gamushara group that I adore, that the flavors will be completely renewed and improved starting in September 2024. I visited the Tsubame-Sanjo-type back oil as it had not been refueled recently.

    I tried to buy Chinese noodles with dried back fat sardines as I had originally imagined, but...huh? ? Mori? ?
    I see, I only have experience at about 10 Tsubame-Sanjo stores, so I was narrow-minded, but I wonder if they also have so-called tsukemen! ! This is still new to me. I've never eaten Tsubame-Sanjo with dipping sauce. That's why

    The amount of back fat is determined by the middle fat. Free to medium and big oil, 100 yen if you go to oni oil.

    Counter seats only. Most of the seats are for two people, so if you sit on one, it feels like you end up occupying two seats.
    There are many autographed colored papers in the store. Because of its location, it's easy to get a variety of filming locations, and it's easy to understand when it comes to specializing in Niigata ramen, and the Gamushara brand is unmistakable, so it's easy to see why it was chosen.

    Was it bad timing? The rice bowl arrived about 20 minutes after I placed my order.
    Flat noodles, a beautiful sweetness behind the saltiness. Default is soft. It has a gentle texture that even small children will find easy to eat.

    Add those noodles to the dipping sauce. Instead of being pickled, it's hitahita.
    Ah, it's like this! The large, plump back fat makes it stand out. The sharp and salty Nibo soup contrasts with the sweet and spicy. The taste of dried sardines in a good way. I see, maybe you've never eaten it? Surely, this is what happens when you make Tsubame Sanjo back fat dried sardines ramen into a tsukemen style, right? However, if you order without knowing that and the rice arrives, you might be shocked. Because it has a lot of back fat and a crunchy dried sardine.

    The ingredients in the dipping sauce are deep-cooked dark-colored menma and roast pork. Personally, I would like more green onions even though they are the default, and apparently they are not included in the additional toppings, so maybe there is no setting in the first place? I might be happy with some onions.
