    Flat Ota Ward.
Since I was near Omori, I decided to have lunch at a ramen restaurant I found.
The name of the shop is Genghis Khan Sheep Tree Omori main store

It's a sheep soup ramen that I sometimes see.
There seem to be a variety of miso-based ramen available.
This time I ordered miso ramen with lamb meat and small rice.

Here is what was offered after a while.
Oh, there's lamb meat in the middle. It's miso ramen style with fried bean sprouts and cabbage.
The soup is white miso based and has a slight sheep smell, but it's not too bad and is easy to drink.
When I asked for it, I was given garlic and it was a nice touch.
The noodles are curly and thick.
I think thick noodles go well with miso ramen.
The volume of lamb meat was moderate, but I might want to eat more chunks. It was stewed, soft and easy to eat.

I finished eating it in an instant.
They also had ramen with spare ribs, so I guess I should have gone for that.

Sapporo Miso Ramen Hitsujinoki Omori Main Branch
(Omori Kita, Ota-ku, Tokyo/Nearest station: Omori)

“Hitsuji no Ki” is a ramen restaurant that opened in January 2021 on the first floor of a multi-tenant building across from the triangle plaza in front of the station, a 3-minute walk from the east exit of Omori Station.

This is a unique miso ramen shop based on Sapporo miso ramen, which combines a rich soup made from ``100% sheep'' that does not use any pork bones or chicken bones with a special miso that is a blend of three types of miso.

In the 2021-2022 2021-2022 TRY Ramen Award (Tokyo Ramen of the Year), the most prestigious award in the ramen industry published by Kodansha every year, he placed 5th in the Newcomer's Award in the miso category.

The operating company is Food Revamp Co., Ltd., which operates the following restaurants: Yaro Ramen, Chicken Soba Juban 156, Nagaoka Ginger Ramen Ginger Hot Spring, Tenshin Dim Sum Sakekan Shomon, Yakiniku Onishi, Kurume Yakitori Ichikoro, and Mitsuboshi. The company operates multiple food and beverage businesses mainly in Tokyo, including Gyozado and Tapioca drink specialty store Sanchaya.

This property was previously operated by the Jiro-inspired restaurant ``Yoro Ramen,'' which has been renovated to a new brand by the same management company. The store has a long and narrow layout with a ticket vending machine at the entrance, and there are 10 counter seats and 3 tables for a total of 20 seats.

The menu is based on the basic Aged White Miso Ramen (990 yen), Cheese Aged White Miso Ramen (1,340 yen) topped with cheese (Pecorino Romano) made from sheep's raw milk, and topped with several kinds of spices. There is the ``Spicy Miso Ramen'' (1,240 yen), which uses homemade chili oil carefully extracted.

In addition, there are standard Sapporo miso ramen toppings such as boiled egg, corn, and butter, as well as unique toppings that go well with the 100% sheep lamb hot water soup, such as mounds of lamb meat and coriander.

The side menu includes bone-in lamb spare ribs, lamb and garlic soup dumplings, and hand-wrapped grilled gyoza, and they also have alcoholic drinks, so you can enjoy a quick drink at a ramen restaurant.

It is served on a wooden tray in a distinctively shaped bowl of Japanese tableware similar to Bizen ware. Stir-fried vegetables are placed in a milky white soup made with 100% sheep soup and white miso, and bright red chili oil is poured over it. The chili oil is only floating on half of the bowl, so first I took a sip of the plain soup without chili oil.

The base of the soup is made by cooking lamb ribs and femur bones over two days to concentrate the flavor, and then simmering the raw lamb before serving. The unique milky aroma of the lamb and the sweetness of the white miso combine to give it a relaxing and sweet taste. There isn't much of a distinctive odor from sheep, and the taste is milder than I expected.

The homemade chili oil has a unique spiciness and spice that goes perfectly with the sheep-flavored soup. The soup is quite sweet and the taste of lamb is not very strong, so I definitely prefer it with chili oil made from sheep fat. The correct answer is to use spicy miso. There were peppercorns, ichimi, sansho pepper, and white sesame seeds on the table, and I especially liked the addition of sansho pepper, which added to the spiciness.

The stir-fried vegetables include cabbage, onions, bean sprouts, and shredded lamb. Cumin seeds, which go well with lamb, are also sprinkled in, creating a lingering flavor. The oil used for frying is sheep fat instead of lard. The noodles are medium-thick curly noodles made by Kanno Seimenjo, and have a texture that allows you to enjoy the smooth texture and firmness typical of Sapporo miso ramen.

If you want to enjoy rum, it will cost easily over 1000 yen. It tastes more like cream soup than miso. It's not a bland flavor at all, but it has a rich flavor. I get the sense that they are trying to eliminate the smell of rum, but it may not be a store that I would recommend to everyone. I like Genghis Khan and thought it was good, but once I got a taste of the lamb, I was intrigued. However, I think it will really resonate with people who like it. The same goes for Saba's Chinese noodles in Hamamatsucho, but I think it's hard to go back to noodle shops that focus on a single ingredient unless they have something to turn your dislike into an addiction.

The main store is Omori. It was Hokkaido miso ramen, and the soup stock had a bit of the unique taste of sheep. I ordered miso ramen.
It doesn't have any special taste, so unless you don't like sheep, it's delicious.
The noodles are a little thick and chewy.
