[Reliable quality classic French]
Visited for lunch.
The first appetizer was unexpectedly herring roe.
It is carefully prepared, has less bitterness, and is smoked for a more aromatic finish. It didn't go well with the sparkling welcome drink, so I should have ordered something else.
The second appetizer was marinated salmon.
This is today's surprise dish. The marinade penetrates into the thick salmon, allowing you to fully enjoy its silky flavor. The vegetables are also pickled in vinegar, and the sweet tomato puree can be enjoyed in a unique way.
Potage is white turnip. It has a simple taste, but the finely chopped leaves have no streaks and a crunchy texture.
Grilled lobster pie is a common dish, but it takes advantage of the refreshing flavor of asparagus to bring out the rich flavor of the lobster.
The second surprise was the sautéed Japanese black beef. The meat is not very marbling, but the meat is cooked well and the Maillard reaction gives it a nice char and the meat is juicy. The peppery diable sauce is also a perfect match.
The shiitake mushrooms on the side are equally juicy and pair perfectly with the creamy mashed potatoes. It's a pain that it ends up being watery, but it's still a very satisfying dish.
For dessert, coffee is paired with tea sweets such as shortcakes, macarons, and financiers. A lineup that won't let you down until the very end.
It's 11,000 yen here. It was a satisfying lunch that I didn't think was expensive at all. I like to go back to classical French cuisine like this about once every six months.
