The soba noodles were of course delicious, but the wasabi garnish was also grated? I got a little excited about it. It had a wasabi flavor that didn't hit the nose.
I was left with a good impression of a restaurant that is particular about not only the soba but also the wasabi.

Takumi's soba is made with Hitachiaki buckwheat noodles from Ibaraki prefecture, shipped directly from contracted farmers, and made with homemade flour. Soba noodles made with 100% raw flour.
For the soup, we use dried bonito flakes shipped directly from Makurazaki and shaved in-house, and kelp made from natural red kelp. For the kaeshi, we use a rare soy sauce that has been aged for two years on Shodoshima and further aged in our shop.
Please try the soba noodles first, then the otsuyu only. Also, if you eat a small amount of Japanese wasabi (Japanese wasabi from Yugashima) and green onion medicine on top of your soba noodles, I think it will be easier to understand the taste and aroma of each. Japanese food, not just soba, is originally made by skillfully utilizing the flavor of natural ingredients. Please enjoy our artisanal soba noodles, which are made with the natural flavor of the ingredients without using any unnecessary seasonings.
