I had the special ramen for the first time in two months. I noticed that they were making ends meet without passing on the rising prices of ingredients, such as replacing the green vegetables and menma with mizuna and shredded menma. Also, soy sauce ramen has disappeared from the menu and there are now two types: salt and tandan noodles.
It's a difficult question to decide whether to raise the prices while keeping the same ingredients or change the ingredients while keeping the prices the same, but as a ramen restaurant in the Takadanobaba area, there is no doubt that the ramen is as delicious as ever, so I hope they continue to do their best.

It was by far the best ramen I've had in the Takadanobaba area. This is a restaurant with a high level of perfection, not only in terms of taste, but also in terms of the quality of the ingredients and the atmosphere of the restaurant.
For the first time, I had special ramen (salt) and rouleau rice. The well-salted soup, which is packed with the flavor of Tamba black chicken, is the perfect match for the hand-rolled noodles with a good texture. There are three types of meat, chicken, pork, and beef, so it's filling and satisfying. The 350 yen rouleau rice also had the perfect seasoning for Japanese tastes.
I will definitely go for the soy sauce and tandan noodles as well.

Personal recommendation after trying all 3 types of regular menu items
1st place: Salt, 2nd place: Dandan noodles, 3rd place: Soy sauce
The salt that brings out the flavor of Tamba black chicken ranked first, and the soy sauce ramen had a stronger taste of the soy sauce than the chicken in the soup stock, making it the only soup I couldn't finish. In this area, taste preferences (balance of dashi and kaeshi) may be a big factor for soy sauce ramen.
As for the noodles, I preferred the hand-rolled noodles to the thin noodles in terms of texture and filling. It may have been a coincidence, but I noticed that the thin noodles were a little softer than I expected.

I also tried the hiyashi chuka that I received a comment from the staff at the restaurant. Even at good ramen restaurants, when it comes to hiyashi chuka, the ingredients often lose out to the taste of the sauce and are not very good, but this hiyashi chuka has an exquisite sauce that does not take away the goodness of the ingredients, so you can enjoy it to the very end. Ta. It makes sense that the offer period was extended longer than planned.

I came to the store around 13:00 and was able to enter without lining up. The inside of the store was very clean and I thought it would be easy for women to come and visit the store. The rouleau meal I was looking forward to was sold out. I ordered special soy sauce ramen and tandan noodles.
The tandan noodles had a strong sesame flavor and felt a little powdery, but I think sesame lovers will like it because it's not too spicy. The soy sauce ramen was so elegant and delicious that I drank the entire soup. Next time I would like to order ramen.

2023.3 First visit to ラーメン¥1,000
The owner of the newly opened ramen shop "Horiとケ" in Takadanobaba was originally an office worker. After studying in Aoba for many years, he borrowed a cafeteria in Musashi Murayama City for a short period of business last year. In February this year, he finally opened his own restaurant in Takadanobaba. store.
This shop specializes in three types of chicken, including Tamba black chicken, Tamba red chicken, and Tottori pheasant produced in Kyoto. The soup is made with pork and various cuts (dried goods). It is rich in gum and tastes particularly rich. There is also a little bit of sweet noodle sauce flavor (it felt familiar when I ate it, but after checking it out, I found it was really added).
The hand-kneaded noodles taste bland and not very chewy, but I prefer the soup. The barbecued pork has smoked pork shoulder and chicken breast. The smoked pork is very fragrant and I like it. What caught my attention was the small lump of minced chicken that looked like canned tuna in the soup. This was the first time I had seen this made.

I quite like the taste, but the quantity is a bit too little. I will try the soy sauce taste again next time.

2023.4 Second visit, 醤油ラーメン¥1000, Ajiyu ¥150
This time I had soy sauce flavor, and a small amount of shiitake mushroom puree was put in the soup to add flavor. This time I drank it, it didn’t have such a strong gelatinous texture, but when I started drinking it, I always felt that something was missing. For example, it smelled fragrant but tasted relatively plain, but it gradually got better in the second half of the meal.

This time the hand-kneaded noodles should have been carefully improved. The noodles that are close to flat-kneading have a smooth texture and a chewy texture, which will leave an impression on people. The barbecued pork includes smoked pork shoulder, pork belly, and chicken breast. The aroma of pepper sprinkled on the smoked pork slices particularly stimulates the appetite.

I felt quite full this time and will try the dandan noodles next time.
