    Very beautiful udon. It is known as the true udon in Tabelog 100 Famous Stores 2024 and others.
    It is a beautiful style that is far different from the image of Musashino udon.
    The location is slightly hidden from the station, but it's in an alley that's very close to banks.
    From the outside, it looks like a private store, but the interior is similar to that of a retro store.
    I thought it would be more homely, but the interior roof is decorative? I can feel the effort put into it.
    It's a local favorite.
    The soup without grated udon is Musashino udon style, but it is very smooth and feels like somen noodles without being stiff or voluminous.
    However, the noodles are thick, and you can feel the flavor of the noodles themselves as you chew.
    I would like you to try just one bowl of noodles first.
    The soup is also very nice and light, which brings out the deliciousness of the udon itself more than the thickness.
    However, there are clear drawbacks, such as the small amount of noodles and the fact that it takes 15 minutes to be served because they are boiled and fried to order.
    Is it because of the location and service hours compared to the reputation on the internet? It's a little-known spot on weekdays when there's no line up around 1pm.
    This is truly delicious udon.
    The selection and prices of sake seem to be good, so the evening looks pretty good too.

    BGM is country-like American pop.
    There are 6 counter seats facing the wall, and table seats available.

    I was guided to the table closest to the entrance.
    It was empty near the end of lunch hours.

    The cold drinks were self-service, so I didn't notice that there was no guidance.

    Lots of needle ginger, all-purpose green onions, and sesame seeds.
    Fragrant and crunchy tempura.

    Cold soup.
    Kelp, sardine, chin, there is no strong argument for either one.
    The soup has a complex and deep flavor, like nothing I've ever tasted recently.
    It has a mild flavor and low salt content, so it's delicious.

    Very thick square udon noodles.
    There are light grooves and brown grains on the surface.
    It is said to be bran, the outer skin of wheat grains.
    Is that what they call “hoshi” in soba?
    It has a strong chewy texture and a gentle flavor.

    I drank the cold soup and it was delicious.

    Udon flour is
    Kagawa Prefecture Kinoshita Seifun ``Shirobara'' and whole grain flour from Niiza.
    Blend and use. Adjust the amount of water taking into consideration the temperature of the day.
    It seems that the owner himself makes the dough by hand every day while making adjustments.

    You can eat delicious udon. The noodles have a firm and firm feel. And a wonderful soup with a good dashi stock. I was more impressed by the taste of the soup than the noodles.
    It seems to be quite a popular store. The inside of the store isn't very large, so a regular customer told me that even if you don't get in the first round, you'll have to wait 20 to 30 minutes even after the store opens. However, I think the price is more than reasonable.
    I think the menu is quite extensive considering the size of the restaurant.
    The customer service of the staff is also not bad. I recommend this restaurant if you want to eat delicious udon in a folk atmosphere.
    They also stock a certain amount of Japanese sake, so it might be especially good for sake lovers.
