A few highlights from a late December course that is thoroughly worth the 2 Michelin star rating!
Shirako never tasted so delicate and umami on sushi rice.
Boiled eel belly sushi. Very soft texture and fatty mouth feel, way better than normal thinner anago sushi.
Toro with uni. Enough said.
Most of the sushi tastes different from what you normally get in another fancy sushi shop, showing the phenomenal skill the chef.
Do yourself a favor and try this whenever you're in Sapporo!

Very refreshing Edomae styled sushi with unique presentation and use of aged fish and red vinegared rice. Sake paring but no wines on menu. Location in quiet residential part of Maruyama. Servings are bigger than most
