_warm and lovely experience at this Michelin 1 star soba noodles restaurant. To be honest, I have never been a big fan of soba noodle; however, this dining experience has totally reframed my understanding. Highly recommend.

A humble little place serving udon omakase. You must make a reservations in advance & I suggest choosing lunch instead of dinner because the price gap is too much (the most lunch choices starts from ¥4500 , while there is only one choice for dinner which cost us ¥55000 - yes Im not mistaking my writing). However all the food was simply amazing, the soba was the best handmade soba I’ve ever tried. It was served by a very kind & humble old couple, makes the dining experience very warm, welcoming, and feels like home. Will come back and try the upgraded choice one, hopefully!!

You can easily enjoy high-class Japanese cuisine at night and Kaiseki cuisine including handmade soba noodles during the day.
First visit after making a reservation with a gourmet friend.
About 5 minutes walk from Shinbashi Station.
The shop is located on a corner lot in a back alley, so if you don't know about it, you won't often pass by.
When I arrived a little before the store opened and waited, the noren curtains were put up just as the store opened for lunch.
The inside of the restaurant is small, with 5 seats at the counter facing the kitchen in the back, and a table that seats 4 people by the entrance.
There is tatami seating on the second floor.
I was asked if I wanted a table or a counter, and of course I went to the counter.
Greet the chef and enjoy your meal while watching the cooking process.

The scent of charcoal is fragrant.
▪️Mushroom chawanmushi
There are brightly colored sea urchins in the dashi jelly.
Chawanmushi is warm and smooth.
▪️ Sweet sea bream hotpot
It is served simmering in a small clay pot.
As the name suggests, the meat has a strong sweetness and is strong enough to stand up to the soup stock.
▪️Tuna and sea bream seasoned with kelp
The tuna, which is close to medium-fatty, has a mature flavor.
The sea bream is also delicious with just the right amount of moisture and concentrated flavor.

▪️ Sweetfish bittersweet (alcohol appetizer)
It's bitter enough to make you wince, but it goes well with sake.
▪️Tempura
・2 Pomfretfish, maitake mushrooms, sweet potato, mukago
Serve with coarse salt or soup stock.
Freshly fried pomfret has a nice aroma and taste.
Enjoy one with salt and the other with dashi soup.
Maitake mushrooms are seasoned with salt to bring out their strong aroma.
Mukago has a light taste and is a taste of autumn.
It has a sweet taste that is different from sweet potatoes.

The combination of the sweet chestnuts and the saltiness of the salmon roe on top of the chewy rice makes it even more delicious.

Finish off with handmade soba noodles.
If you eat it as is, you can fully enjoy the aroma of soba.

Slurp it all at once with the sharp soup stock.
They also serve dipping sauce to top it up with, but it's enough even if you don't add more.
Dilute it with thick soba water and drink it all.
