Karasemitei Description
Located in Kyoto, Karasemitei is a unique restaurant specializing in Tonkatsu, a popular Japanese dish of breaded and deep-fried pork cutlets. What sets Karasemitei apart from other dining establishments is its innovative approach to cooking and its commitment to using high-quality ingredients.
One of the standout features of Karasemitei is their special aging technique called '冬眠熟成®×低温調理' (Winter Hibernation Aging® x Low-Temperature Cooking). This method involves carefully aging the pork to enhance its flavor and tenderness, resulting in a melt-in-your-mouth experience. The chefs at Karasemitei take inspiration from Italian and French cuisine, meticulously cooking the Tonkatsu to perfection, ensuring that it is both flavorful and light, without leaving you feeling heavy or greasy.
In addition to their expertly prepared Tonkatsu, Karasemitei also offers a range of homemade sauces and condiments. Their signature Tonkatsu sauce is made by adding a hint of fruit sweetness to the umami of the vegetables, creating a unique and delicious flavor profile. They also serve a homemade grated ponzu sauce, made from scratch using Kyoto's pristine spring water and only the sweetest parts of the daikon radish.
The restaurant's dedication to using locally sourced ingredients is evident in their menu. They take pride in using fresh, seasonal vegetables from Kyoto, ensuring that each dish is bursting with flavor and showcases the best of the region's produce. The restaurant's interior is tastefully decorated, with a serene atmosphere and tables that offer a view of the central courtyard.
Whether you're a fan of Tonkatsu or looking to try something new, Karasemitei is a must-visit destination for food lovers in Kyoto. With their innovative cooking techniques, homemade sauces, and commitment to quality, Karasemitei offers a dining experience that is both satisfying and memorable.

My first Michelin experience greatly amazed me! The staff's greeting and menu/dish explanation in English exemplified hospitality, warmth, and thoughtfulness. Salad with hot cheese dressing served as an ideal appetizer, making me eager for the pork cutlet much more. And finally, the juicy, rich, and tender pork cutlet (combination: ヒレ and ロース) came! My first bite almost overwhelmed me, finding it hard to utter something, just way too touched. I enjoyed them all and felt very appreciative. And I know I will come back to savor them again whenever I visit Kyoto.

They offered best pork in slow cooked style! I found this place on tabelog, and make the reservation 2 months in advance. The restaurant are serving with limited seat, the staff are nice to explain the menu and trying to chat with us even we are not speaking Japanese.
When I leaving the place I just saw a sticker on entrance and realized that they are Michelin’s recommend, they totally worth to get it!!
