The most recent visit was in December.
It all started when I was introduced to it by a person in Kanazawa before I got my Michelin star rating.
Although the dishes are modestly seasoned, they all leave a lasting impression. I guess they place great importance on how to bring out the flavor of the ingredients themselves.
It's been about 5 years since I last visited, but I've never gotten tired of it. I feel like you are always aiming high.
The utensils are kimonos for cooking, beautiful antique baccarat and vintage pottery.
In addition to the food, I also have nothing to say about the way the chef and staff treated us.
When I asked about it, I was told that the general was directly scouted, and the first-class players also have a first-class eye for people.
I don't live in Kanazawa, but I feel it's worth coming to Kanazawa just to visit this place.
The Michelin 🌟🌟🌟 rating was solid 😄

One word: “Satisfied”!

There are 8 seats at the counter (currently 6 seats due to infection prevention measures), and there is only one rotation per day, making reservations difficult.
There were four seasonal crab dishes, and the Kobako sushi was the most delicious.

The food alone costs about 25,000 yen (tax included) per person, but it doesn't seem expensive at all.
I wanted to go again and tried to make a reservation on my way back, but I was told that it was ``full'' for 6 months and has been closed since then.
I wonder when the next one will be...

There were many ingredients from Noto and it was delicious. The next reservation was 8 months away. When I visited the store, it seemed to be fully booked for the next reservation.
