La FinS is a French restaurant located in Shinbashi, Minato-ku, Tokyo. The name ``Finesse,'' meaning ``memory'' and ``lingering aftertaste,'' reflects the chef's desire to create a restaurant where you can remember a wonderful meal with your loved ones.
You can bring your dog with you if you stay in a paid private room (12,000 yen). Please note that you will not be able to accompany your pet if it is making noise, running around, or if it is not well-trained. If you are unable to wait properly in a private room, please reconsider entering the store with your dog. Also, the room was very chic and had a calm atmosphere.
This time I ordered the standard course Munyu Finesse (22,000 yen) and a 10,000 yen pairing wine (3 glasses). As a Shirokuman who doesn't drink too much alcohol, I was very happy to be able to have a good wine in a reasonable amount that goes well with the food. Also, since I usually only drink wines in an affordable price range, all of the paired wines were very delicious.
The amuse was an assortment of ham patties and figs. Each ham and pate had its own character, and I was able to enjoy the different tastes and aromas. Next, I had the truffle and foie gras with white corn. These were also fragrant and melt-in-your-mouth flavors that left me at the mercy of them. The bread was served with peperoncino, chili oil butter, and yuzu butter. In particular, the peperoncino and chili oil butter had the feel of a familiar snack, which made me feel warm. After relaxing, the Asian black bear stew with brown scrambled eggs came out. I had eaten brown bears in Sapporo and Shiretoko before, but this was my first time seeing an Asiatic black bear. Contrary to its name, it has no odor and has a rich flavor, which goes perfectly with the egg that comes with it.I was very surprised. The vegetable pot-au-feu that came next was a masterpiece that despite containing a variety of vegetables, each one had the perfect texture, allowing you to enjoy the harmony of the vegetables. Today's poisson was smoked mackerel and abalone in butter sauce. The slightly smoked mackerel fillet had a deep flavor, and the abalone and butter sauce came together very elegantly. Viando was Tajima beef with soft-shelled turtle sauce and TKG. The Tajima beef chateaubriand and shimeji mushrooms really stood out, and the combination of the egg-cooked rice and soft-shelled turtle sauce that supported them was simply wonderful. The dessert was a mini peach parfait, and to be honest, it didn't need to be a mini parfait, I just wish it would have been served in a mega size. The avante sale was pina colada with mango sorbet and pineapple sauce with frozen coconut. Not only was this a delicious dessert, but it was truly a sensory experience and was extremely satisfying. The course ended with tea and chocolate, and it was an incredibly moving three hours.
I also learned a lot from having Chef Sugimoto explain each dish and share some small stories.
It's not a restaurant you can use on a daily basis (the most affordable course for two people, paired wine, a private room, 13% service charge, 10% consumption tax, totaling just under 100,000 yen), but it's worth more than that. It is a shop where you can enjoy the excitement and experience of the experience, so if the conditions allow, this is a shop that you should definitely visit at least once.
