I ordered backfat salt.
The clear soup has a hint of oiliness and saltiness, but it's so delicious that you'll want to drink it all.
The flavored backfat that is on it like a topping has a slightly strong taste, but it is also strangely delicious. Goes well with beer (Akaboshi).
The large, medium-thick char siu was too hard for me. I think it's better to cook the meat on the firm side, rather than cooking it medium so that the oil from the meat comes out and mixes with the soup, making it stale.
In the second half, stir in raw eggs to give it a mellow taste, and finish the meal while eating white rice.
It was perfect enough to make you want to try other menu items on different days of the week.
