I went to Matsukura, which is run by the third generation, through a friend's introduction. Reservations are required, but I was surprised that there was a Japanese restaurant in Susukino where you could eat such a wonderful lunch. It's full of seasonal items, so I returned immediately after a month ☺️They're very particular about the soup stock, and it's filled with Hokkaido's seasonal ingredients. I also enjoyed talking with the owner about ingredients and how to make them.
