Menya Shibano Description

Menya Shibano is a hidden gem located in Tokyo, Japan, specializing in a unique and flavorful dish called '煮干し中華そば' (Niboshi Chuka Soba). This cozy restaurant is known for its delicious ramen noodles, which are made from scratch using traditional Japanese techniques. The broth is the star of the show, made from simmering dried baby sardines, giving it a rich and savory flavor that is unlike any other ramen you've tasted.

One of the standout menu items at Menya Shibano is their signature Niboshi Chuka Soba. This is a niboshi chuka soba restaurant located right near the Daimon gate.
The inside of the store is small and crowded at lunchtime.
Purchase your meal ticket before lining up.
I made it with special dried sardines Chinese noodles.
It is 1080 yen.

I took a seat at the counter and after a while, the rice bowl arrived.
Chinese noodles with delicious roasted pork belly.
I also like that it has chopped onions in it.
It reminds me of Hachioji Ramen.
Dried sardines have no odor and don't overpower the smell, so it's delicious.
The taste is just right for lunch.

Thank you for the meal.

I had the rich dried sardines soba, and it had a lot of collagen, but it wasn't too greasy, and the mix of the dried sardines and chicken broth in the soup had just the right balance. The chopped onions did a good job, and the noodles were crispy and wonderful. The menma was thick and soft, and the grilled chashu was delicious. Thank you for the meal.
