Nibosuke Description

Located in the heart of Tokyo's Chiyoda district, Nibosuke is a hidden gem that specializes in carefully crafted Niboshi ramen. This cozy restaurant offers a unique dining experience, combining traditional Japanese flavors with a modern twist.

What sets Nibosuke apart from other ramen establishments is their dedication to using only the finest ingredients. The broth is made from meticulously selected Niboshi (dried sardines), which are simmered for hours to extract their rich umami flavors. The result is a flavorful and aromatic broth that is both comforting and satisfying.

One of the standout menu items at Nibosuke is their signature Chashu ramen. The tender slices of pork belly are melt-in-your-mouth delicious and perfectly complement the savory broth. For those who prefer a bit of variety, Nibosuke also offers a selection of Tsukemen, a dipping-style ramen that allows you to savor the noodles and broth separately.

The restaurant itself is cozy and inviting, with a minimalist decor that allows the focus to be on the food. The friendly and attentive staff are always on hand to provide recommendations and ensure a memorable dining experience.

If you're a ramen enthusiast looking for a unique and flavorful experience, Nibosuke is a must-visit. Prepare to indulge in a bowl of expertly crafted Niboshi ramen that will leave you craving for more.

At night

【soup】
The description said that it used dried sardines more than the lunch menu, so I was imagining Donibo, but I was disappointed in a good way😏
The first thing that comes to mind is the unexpected scent of soy sauce 👃 After that, you get a strong niboshi feeling 😂 This might be the first time you've had this kind of dried sardine ramen 🤘 The surface is covered with thick lard, so it stays piping hot until the end. In addition to being edible, it also has a good animal-based flavor 🫷

【noodles】
The noodles are medium-thick and straight, and the boiling is a little hard ✊For some reason, I feel like there are a lot of noodles like this in niboshi ramen 💦 I ate it somewhere but I can't remember 😓 I would say it has a bit of a dry noodle feel, or rather the core remains. Or should I say...🤔

【roasted pork fillet】
It's no exaggeration to say that this is the star of the menu 🐷 It's no longer grilled pork 🤪 Three pieces of large braised pork 💥
Although it has a slight pork smell, the fat layer is thick and the meat layer has plenty of fiber. It's not like the flavor is soaked in that much.

3 months a month! ️
🌕🌕🌕

Apparently, the secret to this light niboshi is that they stir-fry the sardines first to evaporate the excess oil🤭They are very particular about the process 🤝 Even people who don't like sardines can definitely enjoy this niboshi ramen. I think 👏👏 The taste balls were delicious 🫶 I want to try the Nibo flavor of regular Nibosuke ramen 😆
Mr. Gosso ^_^🙏

=====MENU=====
〇Ultimate fluffy chashu noodles (night only)
〇 Actual cost: 1,500 yen
------
About a 2-minute walk from Ochanomizu Station, you can see the store if you enter Ippon-Nakamichi with Sundai Preparatory School as a landmark. I visited after 7pm on a weekday and entered the store without waiting. I was guided around by the lively shouts of the store staff.

This time I ordered "Yonibo" which is only available after 5pm. Expectations are high for limited edition dried sardines.
You can choose between medium, medium, and large noodles (medium: 200g, medium: 250g, large: 300g) and rice for the same price.

On the wall is a guide that makes you feel a strong sense of our commitment to dried sardines. There are also charging outlets at the seats, so it's a good idea to charge your PC or smartphone. It's rare to find a store that cares so much about its customers. thank you.

〇Ultimate fluffy chashu noodles
A powerful cup. The soup has a strong flavor of dried sardines that spreads in your mouth. As you can see, the soup is clear and doesn't have the harshness that is typical of dried sardines, so even beginners of dried sardines will have no problems. It also goes well with Hibiki, a high-class Chinese noodle dish.

And above all, the impact of chashu. Contains three slices of luxuriously thickly cut Mediterranean pork. As the product name suggests, it has a fluffy texture. The juicy char siu is steeped in flavor, and the more you bite into it, the stronger the flavor of the meat becomes.
It comes with rice for free, so you can eat one slice on the rice and enjoy it as a char siu bowl.

More than 1,500 yen. It's a satisfying drink that satisfies both your stomach and your heart. It's close to the station and has table seats, so it's a good place to have a drink with colleagues after school or work. Recommended.
