Ramen Ajisai Description

Ranked as the #1 restaurant in Nagoya, this establishment is celebrated for its signature special soy sauce ramen, boasting a unique blend of hydrangea's prized soy sauce soup, house-crafted thin noodles, and meticulously curated toppings.
The noodles, renowned for their silky texture, harmonize exquisitely with the subtly aromatic soup. Notably, the wonton topping stands out as a personal favorite, offering a delightful contrast with its chewy skin and an abundant filling of ingredients. The special ramen selection is a testament to diversity and generosity, featuring an array of toppings, including bamboo shoots, huntun, chicken breast char siu, pork neck char siu, and even a separate egg.
The bamboo shoots, renowned for their chewy consistency, are saturated with the soup, offering a tender and flavorful bite. The chicken breast chashu, cooked to medium-rare perfection, presents a thick, straight cut, reminiscent of smoked ham. Noodle enthusiasts will appreciate the straight and firm noodles, reminiscent of traditional noodle varieties. Even those who typically prefer well-cooked noodles will find satisfaction in this offering.
This Nagoya-based restaurant is renowned for its special soy sauce ramen, characterized by Ajisai's distinctive soy sauce soup, house-made delicate noodles, and a thoughtfully selected medley of toppings. It delivers a gratifying dining experience, where the mellowness of the soup and the silkiness of the noodles combine seamlessly. The diverse range of toppings, generously provided, ensures a delightful culinary adventure. For those in pursuit of an authentic and flavorful ramen experience, this establishment is an absolute must-visit.

The only one thing want to mention is the long queue…
I arrived around 11:50…
When I sit down in the restaurant it’s 13:30…
So if you really have time or no worry about waiting in the long queue.
Then you can visit…
During summer, it’s too hot and humid when you wait in the parking.
But food is nice and you can listen Jazz music when you have ramen….

Translated from Japanese:
Either go early (before opening) or late (14:00~) as on between the queue literally takes at least 1 hour before you get in the shop.
Shoyu base ramen noodles is the speciality of the place.
The Noodles are home made.
The taste of the soup is light so it is recommended to understand the delicate taste of Japan cuisine to plainly understand it.
The master ensure his customers get the ramen taste as he want to present it.
There are no pepper nor any other spices on the counter.
Chashu is ok

The shoyu tsukemen was really good. The dipping soup was soy sauce based with hint of sourness from yuzu (maybe). The noodle and meat portions were generous.
