Respiracion

Fantastic dinner experience. We made a booking several months ahead of time because we were traveling from Yamaguchi-Ken to eat at this restaurant. The staff speak very limited English, and our Japanese is limited but we made it work!

Upon arrival, you are ushered to a waiting room. The room has a beautiful wood table and there is spa music playing.

Once it’s time for dinner, they will seat the parties one by one from the waiting room to the dining room.

Each course was creative and outstanding. The staff had English translated descriptions of each course printed on a card for us. My favorite was the lily bulb course and the gazpacho- very creative and unexpected!

The only thing lost in translation seemed to be the wine pairing. We eventually figured out that other tables around us were getting a wine pairing with each course- but we were never offered a pairing course. I think it would’ve been helpful if they would have had a card explaining the wine pairing in English as well and we would’ve ordered it- something I’ve seen at other Michelin star level restaurants in Japan.

Playful dishes and exciting experience. The right price for 17000 yen/person course. Wine by the glass was only 1800 yen. Deer was the most tender and juicy I’ve had, hard meat to get correct. Stuffed by the end with so many courses.

Generally, decent.

The service is great. As a guest, I feel absolutely comfortable while eating. The manager was polite and kind.

Astonishing choice of tableware, fully considered the aesthetic. The only disappointments were the spoon for dessert, and the cup for cappuccino should be both smaller.

About the dishes:
The whole concept was about respiration/ scent of the nature. But, to be honest, I think the concept was not expressed in its strongest way through cooking. Although the wild leaves, and the strong sea smell fish reminds people the picture of the nature in some way, I expect more than that...

(The ibrico pork with grilled mushroom is impressive. It was full of flavor. ) For the other courses, I think they could be more tasty than they were.

We had 8 course for 8000yen. So, good value.

I will recommend here for its atmosphere and service.
