A store in Hakata, Fukuoka.
I was invited by a friend to join me at a restaurant where reservations are difficult and people have to wait for a year.
Next year 2024 is already full, so the next time you can go is 2025 (^^;;
The store is built in the style of an old folk house and has 9 seats at the counter, with only one rotation per day.
It's an open kitchen so you can always see the food being prepared.
The chef is Hideyuki Kaneda, who worked at French restaurants in Fukuoka and Kobe, Asia's No. 1 Indian restaurant in Bangkok, and a Japanese restaurant in Tokyo, before opening a restaurant here in 2019 and creating innovative cuisine that is not bound by genre. It is.
Not only was everything delicious, but it was all made with elegance.

All the dishes were gently seasoned and had a deep flavor, especially the mackerel cooked in bran bran, which was served cold.
I was impressed by the careful consideration given to the season and the interior of the aircraft.

On the return trip, I was able to thoroughly enjoy the seasoning of the summer vegetables, conger eel, and the careful preparation of the sukiyaki-style beef, each of which was carefully selected.

I would definitely like to make a reservation at the store with an eye on the future.
