This is the tsukemen style where noodles and soup are separated and you’d take some noodles each time and dip them into the sauce bowl. This is great because you can then control how light or heavy the taste (how much sauce/soup to dip)
Also great if you are coming in hungry as you can get up to 3x of the regular serving of noodles for free. (Maybe more because I didn’t look further, I got 2.5 times and didn’t need dinner).
Pork was great. Perfect balance of fat and meat.

Dipping sauce was nicely flavoured and not too salty, and the noodles had a great springy texture, but the crowning glory must surely be the pork. OMG, THE BRAISED PORK! So tender, and so flavourful, I doubled up on the braised egg, and I really regret not doubling up in my order on the pork because I don't know when I can ever have it again! 😭
