Shigeta Description

Shigeta is a renowned restaurant located in Hyogo, Japan, specializing in the delicious and flavorful cuisine of tsukemen, a type of ramen dish. As one of the selected restaurants in the prestigious Ramen West Top 100 for 2023, Shigeta has gained a reputation for its exceptional culinary offerings and has become a favorite among locals and visitors alike.

What sets Shigeta apart from other dining establishments is its dedication to perfecting the art of tsukemen. Tsukemen is a unique style of ramen where the noodles are served separately from the broth, allowing diners to dip the noodles into the rich and savory broth before enjoying each bite. At Shigeta, the broth is simmered for hours to extract maximum flavor, resulting in a robust and satisfying taste that pairs perfectly with the springy and chewy noodles.

One of the standout menu items at Shigeta is their signature tsukemen, featuring thick and hearty noodles that are perfectly complemented by the rich and flavorful broth. The toppings, such as tender slices of chashu pork, bamboo shoots, and a perfectly cooked soft-boiled egg, add an extra layer of deliciousness to the dish. For those who prefer a spicier kick, Shigeta also offers a spicy version of their tsukemen, adding a fiery and tantalizing twist to the already delectable flavors.

The restaurant itself exudes a cozy and inviting atmosphere, with its warm wooden decor and traditional Japanese touches. The attentive and friendly staff ensure that every dining experience at Shigeta is a memorable one, providing excellent service and making guests feel right at home.

If you're looking to embark on a culinary journey and indulge in the authentic flavors of tsukemen, Shigeta is the place to be. With its dedication to quality and its mouthwatering menu, this restaurant is a must-visit for ramen enthusiasts and food lovers alike.

My friend recommended this restaurant. I went during dinner time and luckily only three or four people lined up, and I could look at the menu in advance and decide what to order, so I was able to get in and eat quickly.
There are not many seats in the store, and the vibe is very good. You can see the chef cooking directly, which I personally quite enjoy.
I ordered one特製つけ麺 with a side order of大盛. The noodles were very al dente and really had a distinctive flavor. 厚切りベーコンand チャーシュー were particularly flavorful, and the dipping sauce was very tasty and went well with the pork and noodles!
I will visit again next time I'm in Kobe!

Come early and sign up for a specific time slot as there is usually a line. Came at 12, and filled out the 2:15 slot. Amazing tsukumen. Was very surprised about the quality and the portions. The texture of the tsukumen was perfect. It had a chewiness that was not too hard or too soft. Paired nicely with the dipping soup. Would definitely go again. Their grilled pork was also good, and will visit again.

This place is as known as tsukemen. I tried once it here before, but i realized i don’t really like taste of tsukemen(but noodles was so delicious) So i choosed another option, “Majesoba”, it was so nice. I try to go here once or twice a year when i have a chance to stay in Kobe.
