    Had an exceptional birthday meal here.

    Shirato crafts each dish (20 in total!) with precision and absolute refinement in taste. Chef definitely incorporates French cooking with fresh Japanese ingredients well.

    We had both the alcoholic and tea pairings and they were fantastic as well.

    Although we had limited fluency in Japanese, chef tries his best to explain each dish to us and it was a memorable dining experience.

    It is a true hidden gem with not much publicity but with the best local ingredients for a season. A standard is 20 dishes with a very unique pairing menu either with various alcohol and/ or non-alcohol drinks. You can taste many of the best seasonal flavor that the chef has handpicked to create a very innovative recipe backed by a truly authentic technique. You will be amazed by many attentions to details and each ingredient is given a full consideration to deliver the best flavor on plate. The chef goes as far as cooking three days or more to derive a real slow burn smoke flavor or tender dashi soup stock using sustainable ingredients for example. Wellness and happiness in mind with no cream or butter or chemical included but all with sustainable ingredients. If you are visiting from overseas, I would also highly recommend here rather than visiting five Michelin star restaurants to appreciate similar ingredients :(

    Interesting creative French food with Japanese style. I love the deer meat with sweet potato and maitake mushrooms.

    Located in Roppongi, this small restaurant offers a fusion between Japan and France traditions, with good seasonal ingredients sourced from all over Japan. Chef Shirato knows how to work with vegetables to make them as important as the proteins in the plate. They have a nice wine list and also sake, although they refuse to open a new bottle for a Junmai Daiginjo opened for 2 weeks. The one I had, however, was a brand new popped up Niigata brand, which was amazing as well. Chef and his sous are nice and kind. I had a great lunch.

    Last chef omakase lunch before I fly back home. It was the best mushroom themed meal. As an avid omakase fan, this is really good fusion omakase!
