One of Kanazawa's top class sushi restaurants. The work is definitely good, and it's good to have a good meal. As a general rule, only courses are served, but we can also accommodate ingredients you don't like. The skill and technique of local fish match the high level, and the sushi is orthodox style. Although the restaurant is only counter-only, the owner wears a mask from beginning to end, and I personally appreciate the fact that he is not unnecessarily friendly and treats customers at an appropriate distance.

When I went to Kanazawa, I was taken here. This is a collaboration with a famous restaurant that is listed in the Michelin star.
Actually, this was my first experience at an Edomae-style sushi restaurant... There was one group first at the counter, and we started. Although it has a strong image of being aged, many of the dishes are fresh, and I was impressed by the fact that the ingredients have been rubbed by the rough waves of the Sea of Japan. Also, the owner was friendly and we had a fun meal from start to finish, making for a wonderful Edomae debut!

Today's best dish is! ! ? ?

It was a handful of sujiko! !

Today's best dish is! ! ? ?
That's because I'm introducing the most delicious dishes I've ordered based on my personal opinion!
Please try ordering when you visit this store!
was delicious! It tasted bad! You may have your own preferences, but I hope this will be helpful for those who are visiting for the first time.

Today I went to my first sushi restaurant, Mori Shige.
It happened that there were no other customers, so the atmosphere was very calm and pleasant.
And the course content

Herring roe

Rare grilled octopus
Grilled cod roe
Shime mackerel
Kobako crab

Black-throated seaweed with kelp (liver on top)
Savory egg custard
Sweet shrimp
Medium Toro
Great squid
Pickled tuna
Sea urchin
conger eel
Kanpyo roll

It was my first time eating black-throated liver! It smelled a little fishy. I guess that's why there are so few places to serve it, even though it's such a delicious fish. Well, I'm glad I got to experience it.
The sujiko salmon roe had been loosened up in the style of salmon roe, and it had a very rich and firm flavor, and was very delicious.

And the ending with Kanpyo rolls is so cool lol
Everything else was well organized and delicious, so I would like to go again!
Thank you for the meal (^-^)

Translated from Japanese:

Since it was a Saturday, a three-day weekend, all the places were fully booked, and after making 17 calls, I finally found Shige Mori. . The interior has a nostalgic feel to it, so even if it's your first time visiting a sushi restaurant, you can enjoy it without worrying. ...

Translated from Japanese:

First visit. In any case, the ingredients were good and the chef's careful handling of the knife made it delicious. The restaurant is comfortable and has an open-style kitchen with only a counter, so you can watch the chef's preparations and enjoy the food to your heart's content. oh...

Translated from Japanese:

It is located in an alley near the Saigawa River, a little outside of the lively Katamachi area of downtown Kanazawa. It's a little hard to notice, so you might pass by it. There are only 6 seats at the counter, and reservations are required. With a moderately calm atmosphere...
