A very special experience. Itamae's creations are bold and explosive. Appetisers include fugu "salad", iwashi rolls, whale sashimi (a first!), steamed shirako on chawanmushi. Then comes the traditional white fishes. I felt that given the intensity of the otsumami, the subtle flavours of the white fishes were lost on my palate. But then I lost it at the incredible akami-zuke. It was astonishingly good. The follow up to that is probably Chef's most notable creation, a monstrous akami-chutoro-negitoro "tuna bomb". While extravagantly tasty, I preferred the finesse of the akamizuke. Kohada, Anago, Negitoro maki, Inari roll were all beautifully crafted and still managed to end the meal on a crescendo in spite of the powerful start. Itamae and assistant did everything they possibly could to make us as comfortable as humanly possible and we could not be more grateful for the immense hospitality.
