Sato-san is the real deal. His shari is precise, bold and full of umami. The fish he uses is clearly the very top of the line. I was recommended to his shop via a famous sushi chef in the US. He did not disappoint. And, he is a sushi chef that has a friendly attitude toward every customer, and is full of humor. I can't wait to visit his restaurant again.
