In Akabane, Tokyo, a little away from the hustle and bustle of the city, there is a ramen restaurant called Mentakahashi.
The store is located about 5 minutes walk from the east exit of JR Akabane Station, a little far from the bustle of Ichibangai.
I decided to visit this store one evening after work.
When I arrived at around 6pm, just before closing time, there were several customers waiting.
This scene shows the popularity of this restaurant.
The exterior of the store is simple, yet somehow gives off a sense of history. The inside of the store is small, with only counter seats and only 6 seats, but that's what makes this store so appealing.
I ordered the ``char siu noodles'' which I had heard good reviews about. At a price of 1050 yen, the volume and quality are surprising.
The soup is light and flavored with fish powder.
However, it is packed with deep flavor and richness, and when you take a sip, you will be captivated by its taste.
The noodles are medium thick and have a chewy texture.
It goes well with the soup, and when you take it to your mouth, the harmony is pleasant.
The main character of this ramen is the chashu pork.
It's thick and yet soft.
The flavor of the meat spreads in your mouth.
Although it has a lot of fat, it is not greasy, and the balance is exquisite.
Seasonings such as onions, fish meal, vinegar, and pepper are prepared on the table, and you can arrange them to suit your taste.
I topped it with a little onion. This also brought out the flavor of the soup.
When I finished my meal and expressed my gratitude to the owner, he gave me a slightly embarrassed smile.
Indeed, even though he was quiet, you could feel the warmth within him.
After this day's visit, I headed back to Akabane.
However, the taste of Mentakahashi's ramen and the personality of the owner were firmly etched in his heart.

That name will remain in my heart for a long time to come.
