When I entered the store, there was a group of people waiting in front of me, and after about 10 minutes, they were called, and after another 10 minutes, it was my turn. When I entered the store, I was informed that it would take quite a while since the ordering process would begin after ordering, so I was prepared to wait. However, I still felt that the customer turnover was slow. That's because there were many tables where people were seated but not eating, just waiting to be served.
When it was finally my turn to be seated, I decided on my dish right away, but it took over 20 minutes for it to be served after ordering. It was like this, so it took about an hour and a half from the time I came to the store to the time I ate and left the store.
However, the soba was quite tasty. Although there are many restaurants that have tried their best to make 100 percent soba noodles, they are not chewy and crumbly, but this one has a firm texture. The soba had a rich flavor, and I thought the soba might be a little salty, but it turned out to be very delicious. I have covered almost all of the top 10 soba restaurants in Kumamoto according to review sites, but I personally feel that this one ranks higher than the order of those sites. The point is probably deducted from the long serving time, but I can recommend it to those who want to eat delicious soba.

I've always wanted to go there at least once.
The owner's passion for soba is very deep, and he handles each order with great care.
Because I love soba, it takes time to eat it, but if you don't mind that, please try it.
The Juwari soba had a good flavor, and both the zaru soba soup and hot soba soup were carefully made and had a deep flavor.
My favorite condiment is wasabi!
Apparently they work with the best wasabi farmer in Japan, so the flavor is definitely great. It also went great with soba.
