U.KAI, which has a shop in Kitashinchi, is a chef's counter with only 5 counter seats by chef Yukai Hattori ☆
We offer creative and innovative cuisine by leveraging our experience in a variety of genres such as Japanese cuisine, Italian cuisine, steak, etc.
Chef Yukai Hattori's worldview, in which he goes directly to producers in search of great ingredients from all over the country and expresses his feelings for the ingredients in each dish, is already very popular, not only at restaurants where reservations are difficult, but also with regular customers. It seems like the hurdle is quite high, even for someone who has to wait a year (*゚▽゚*)♪
Excited to go down to the basement of a building lined with restaurants, I felt strangely calm as I sat at the counter, which was designed with a classic yet modern aesthetic.

The dishes that came out that day were exquisitely prepared by Chef Yukai Hattori, who has experience in a variety of genres such as Japanese cuisine, Italian cuisine, and steak.
I think it's a difficult job to identify and purchase ingredients, but it's amazing how much attention is paid to the tools and spices used to utilize them in cooking (*゚▽゚*)♪
When we hear the word innovative cuisine, it is often difficult to understand, but Chef Toukai's innovative cuisine is a one-of-a-kind restaurant where you can enjoy both deliciousness and new sensations.
The sommelier was not present on this day, but he had a meeting with the chef in advance and prepared a wonderful pairing, but before serving the pairing, the chef thoroughly tasted it behind the scenes, and the pairing was perfect every time. The drinks were explained in detail so I was able to enjoy the pairing even more.
Among them, the sake that was served with the mascarpone salmon roe was definitely delicious, as the chef said he liked it so much that he went out and bought it himself.
This kind of innovative cuisine that transcended genres was so delicious that I even thought it was cheating (lol)
It has become my favorite shop that I would like to visit again if I have the chance (^^)♪
