After training for about 10 years under his predecessor at Kyubey in Ginza, he moved to Germany and opened a shop in his current location. I went there a few years ago and tried sushi from all over Japan, looking for a place that could beat Yobei, but in the end, there was no place that could beat Yobei. I was able to visit it again and reaffirm its greatness. All the ingredients that come out are pickled. If you want to eat fresh or high-quality toppings, there are countless options in Japan, but pickles have a unique flavor depending on the original sauce and the balance of the rice that is combined with the restaurant, so Yobei's taste is unique. can only be enjoyed at Yobei. We had about 4 cups of sake, and the bill was 18,000 yen per person. I feel it's cheap considering the content. Appetizers are served first, followed by sushi, so it's perfect for people who like sushi. Just because it's pickled doesn't mean it has a strong taste, and there is a variety of umami and taste that you can enjoy as many pieces as you like. For example, flatfish comes out twice depending on the dipping sauce. It has a completely different flavor and you will never get tired of it. I want to visit again.

This is Edo-mae. There is not a single raw material, and all the material contains the work of craftsmen. I prefer a style that doesn't use any soy sauce from beginning to end. The rice is firm and has a firm texture, and when you bite into it, the sweetness of the rice spreads in your mouth. Vinegar is weak. I think some people either like or dislike the hardness of the sushi rice, but I thought it was interesting since most sushi has a fluffy and soft texture. The boiled oysters, pickled tuna, and squid stuffed in Inro left an impression on me, but the striped horse mackerel and shime mackerel were especially wonderful, and I ended up eating them again as I liked them. Good selection of drinks too. The price was 18,000 yen per person, so I imagine the alcohol cost would be 15,000 yen. If you eat in Ginza, you will be charged 30,000 yen. This is a very rare place where you can get this much work done at such a low price.

You can enjoy Edomae sushi. It feels like a lot of effort is being put into it. I had the sardine, and it was so delicious I'll never forget it. I want to go again. You can also drink 14 generations of Japanese sake.
