A sublime culinary experience from start to finish. The chef uses a mixture of local ingredients with French culinary techniques to craft an omakase course, with each dish having its unique impact through a blend of taste, aroma and texture. Truly sensational.

    ------
Location: 4 minutes walk from Yoyogi Hachiman Station
    Budget: 5,000-10,000 yen (lunch)
    ------

This French restaurant is located near Yoyogi Hachiman and Yoyogi Koen stations, and is run by Chef Ishizaki, who is also famous for his divine mille-feuille. I became a fan of mille-feuille after eating it for the first time, and I had always been interested in French courses, so this time I visited for the lunch course.

I visited in September. Seating is only at the counter. Here is the menu we received this time 💁

    【menu】
    beet tart
Gazpacho (cucumber, tomato, ice cream, herbs, pistachio, panna cotta, winter melon)
Smoked Red Fuji (salmon) and pumpkin pancakes (smoked-flavored cappuccino with white wine cream sauce)
Galician chestnut pork shoulder loin (perilla soup sauce)
    Grape mille-feuille (additional)

It was a great course! The amount of effort that goes into each item is truly extraordinary. It's amazing that this can be done in one surgery. The ingredients cooked in various ways overlap to create a deep flavor.
All of them were impressive, but especially the pumpkin pancakes with salmon and cream sauce and the pork shoulder loin with perilla sauce were outstanding. It was really delicious.

There are pairings and non-alpha pairings, but this time I didn't choose a pairing and had a craft cola instead. This is also delicious with various spices.

And after all, I added mille-feuille. Exquisite custard cream with crispy dough. It's insanely delicious.

It was a very satisfying course! I would also like to hear about the course.

    Thank you for the meal~✨

#Today's sweet is #yumanite's #matcha, herb and melon parfait.

I finally had the timing to visit this store that I had been interested in for the first time.

    Highly original and delicious😳.
It's like a sweet or salty parfait with melon and herbs.

Matcha ice cream tastes like nothing I've ever had before.
It is said to be mixed with an herb called anise hyssop and Japanese pepper.

I've eaten some with cardamom added to give it a cooling sensation,
This one has no taste and feels cleaner.
A new taste of matcha sweets that is neither sweet nor bitter.

    Rice puffs with green seaweed.
I didn't feel any special synergy, but it's not bad.
The colors are all the same.

The melon is round and about the size of a marble.
I wonder how many people can understand the word marbles these days.

When I thought something salty, I tried cream cheese matcha cream.
    Good, good.

    Marigold smells good.
Is it granita? It had melted and I couldn't find its shape.

Salted flesh near the melon skin
    Crispy and nice texture.
Reminds me that it's a cucumber. Good luck.

The matcha cream underneath is sweet.
The sweetness and saltiness come out alternately.
This also has some sweet spice. anise?

    Warabimochi
I felt a strange flavor, but the amount was so small that I couldn't fully understand it.
When I asked about it, I was told that they used kombucha.

Feel the matcha chocolate crunch and sesame.
    Biscuit-like crunch.

If it was this delicious, I should have listened to the explanation properly😇.

It is a French restaurant that is usually open in the evening.
I'm curious about the chef's cooking that makes such a delicious dessert.
But it seems like only the 16,500 yen course is available.
I'm a picky eater, so I'm curious if I'll enjoy it.

I decided to go for the parfait anyway.

    4000 yen including drink.
It's expensive, but it's good if it's delicious.

I had visited the cafe before, but this was my first time visiting for dinner.
Although he was doing everything by himself, the timing was well calculated and the course progressed without any delays.
How long does it take to prepare? The dishes were served one after another at a fast pace that made you wonder. The combinations of ingredients were all well thought out, and the meal was enjoyable for the eyes, tongue, and teeth.
For those who don't drink alcohol, there is a wide variety of homemade soft drinks available.
The famous mille-feuille came out in full size for dessert, so I was really full.
