3rd floor of Tokyo Midtown Yaesu. The store has 6 seats at the counter.
We moved from Chiba Minato to this location in front of Tokyo Station in March 2023.
On this day, except for the sea urchin, all of the rice, water, and seasonings for the sushi rice are made from Chiba Prefecture. The owner's love for his hometown is amazing, as all of the sake he orders is produced in Chiba Prefecture.
I visited the Chiba restaurant four years ago, and it's one of my favorite sushi restaurants of all time. Even though we moved, it was still delicious.
The best from the first boiled octopus. It's an unforgettable taste.
The sushi sticks of bonito and barracuda, red sweet sea bream marinated in bone stock, nigiri of golden sea bream, and nigiri of salted horse mackerel are also extremely delicious.
I also really like the way the shari changes depending on the material.
Above all, General Takaoka's humble and arrogant customer service is wonderful.
This is a sushi restaurant that I would definitely like to visit again.

From Chiba to Yaesu. As always, we use ingredients carefully sourced from Chiba.
The horse mackerel that was picked up at 11 o'clock that day and the cutlass fish topped with charcoal were wonderful. The general goes to Chiba twice a week to fetch water. It's even more powerful than before.

I was truly impressed by the general's smiling customer service and unparalleled skills. Not only for sushi, but also for chawanmushi and miso soup, the flavor of the soup was something I had never experienced before. I think it's good to have a meal like this once in your life.
