Unbelievable! Do not miss this place if you are a foodie interested in an artistic, fusion version of Ramen. You will experience Japanese Flavors and textures, Chinese flavors and some French cooking technique bringing it all together. It all started with an amuse bouche - crostini with salmon. All the ramen is served in a lobster broth with layered and complicated flavors. There were 3 “condiments” on the table; chili crisp with shrimp, curry powder and black pepper grinder. Our waiter suggested adding all. I started and run a chili crisp company called oo’mämē in the US and really liked this Chile Crisp. I waited till halfway through my meal to add all three condiments and was rewarded with even more flavors. We had 3 different ramen dishes all were wonderful; Creamy, Spicy and Regular. So far this is my FAVORITE restaurant in Japan from the last week. Worth the hour wait.

Life is worth living for - my immediate thought as I indulge in every bite of the treats I get here.
A fine mix of the best of Japanese and French cuisines. The lobster bisque, the sous vide meat toppings and the ramen were so good!! The quality of the food, the ambience and the service is what you would expect from a top notch French / Japanese restaurant (choose whichever one you like, since they are both renowned for their high quality of food and service). I am bringing my girlfriend here!

This place is very unique on its own, it’s not just a ramen restaurant, it gives you a fine dining vibe along with exceptional service and the ultimate French and Japanese Ramen fusion experience. I’m no ramen expert but I’ve had a fair share of Michelin starred ramen experiences. I can honestly say this knocks everything out of the park. Maybe it’s just me and this suits my tastebuds but if you’re looking for something special, rich and tasty lobster bisque with al dente ramen then this place really is for you. The lobster gets a special shout out, the meat is tender and full of rich roes. The chicken, and pork were insanely tender, just like the texture of a marshmallow with unique flavours. They also provide you with sour cream in case you want to try changing the taste a bit and add some extra creaminess and acidity to the broth. The results were astonishing. The broth is just heaven, perfect amount of richness with the never ending waves of lobster umami. It’s just so sick!!! The side dishes also looked incredible, I only had the space to fit a boiled egg in me which was delectable the sauce compliments the egg and the bacon so well it’s heavenly. The staff there were so attentive, patient, professional and friendly, they explained everything so well in English, and the chef was just so humble. I would recommend this place 100000000%. This is my favourite restaurant hands down.

Translated from Japanese:

The rich soup is like a lump of oyster extract, and it has a flavor far beyond your imagination! ! It's quite concentrated, but the refreshing taste of the yuzu and sansho pepper makes it easy to drink. All of the oysters are large, and have a wonderfully plump texture that seems to burst with every bite...

Magredo Canal's Ramen Porcini, truffles, foie gras, and a condensed soup made from a quartet of duck, chicken, and beef have an amazing density of flavor! The thick truffles and porcini create a gorgeous look, and the foie gras adds a richness...
