Japanese: Sushi

Ginza Harutaka Description

Located in the heart of the culinary city of Ginza, Ginza Harutaka is a renowned sushi restaurant that showcases the true essence of Edo-style sushi. As you step through the doors, you are transported to a traditional Japanese setting, with a stone-paved pathway reminiscent of a charming old town. The interior features a beautiful hinoki wood counter, where you can witness the skilled craftsmanship of the sushi chefs up close, creating a serene and elegant atmosphere.

The owner and head chef, Harutaka Takahashi, honed his skills for 12 years at the prestigious Sukiyabashi Jiro before opening Ginza Harutaka in 2006. His dedication to perfection is evident in every piece of sushi he meticulously prepares. The standout feature of Ginza Harutaka is the unique texture of the rice, which is cooked to a slightly firm consistency and seasoned with a distinctive blend of rice vinegar and salt. This results in a delightful melt-in-your-mouth experience that perfectly complements the freshness of the ingredients.

One of the highlights of the menu is the selection of tuna, which includes three types: lean, medium fatty, and fatty. Each piece offers a different flavor profile, allowing you to savor the nuances of this prized fish. In addition to the exquisite sushi, Ginza Harutaka also offers a variety of sophisticated appetizers, such as octopus, eel, abalone, and mantis shrimp, which pair beautifully with their selection of sake.

Ginza Harutaka is a haven for sushi enthusiasts seeking an authentic and refined dining experience. With its dedication to using only the finest ingredients and the masterful skills of Chef Harutaka, this restaurant sets itself apart from others in the area. Whether you are a connoisseur or a first-time sushi eater, Ginza Harutaka promises to deliver an unforgettable gastronomic journey that will leave you craving for more.

An all-time favorite sushi-ya. Taisho is very friendly. Even with limited communication, he always makes you feel comfortable and welcome. Also, staff is helpful with announcing and showing each fish being served, either with a reference book or google translation.

Good ostumami but the Nigiri is what to come for, the bonito was truly remarkable and a real highlight.

One of the chefs also spoke very good English which was a great help in explaining things and making conversation. He even had a book explaining each fish in Japanese and English, this really helped to elevate the whole experience and create a very memorable evening.

This is an amazing sushi-ya. The food quality and presentation are fantastic. The restaurant is very small and has limited seating. But this allows the food to be served right from the chef to you. It was fascinating watching Chef Harutaka Takahashi at work. His skills in preparing the food was a show in itself. His bone cutting on the eel dish was a delight to watch. Each dish that arrived was flavourful and beautiful. When the sushi dishes came our English speaking server was kind enough to bring us a book and described which fish was being served. Was it expensive? Of course. But it certainly was one of the best sushi meals I have ever had.
