As a professional chef, I strive for perfection and this Michelin bib gourmand establishment has set the bar extremely high for what a pork tonkotsu meal should look and taste like. For ¥1900, I got their special kurobuta black pork cutlet which came with a beautiful bowl of rice, miso soup made from his mother's miso, a fabulous small plate of housemade pickles made with black vinegar to counter the fattiness from the twice cooked pork cutlet. Extremely impressed. Wonderful flavor and definitely a small family-owned restaurant field seating. Only 12 people at one time. Strongly recommend reservations unless you can score a walk-in reservation.

We didn't make a reservation beforehand. There's a check-in screen halfway down the staircase that will give you a receipt with a number and a QR code.
Scan the QR code to not only see seating updates but also to sign up for an email alert. It took about an hour starting at 11:30 am to get our table.
It was worth the wait though! I had the loin/rosu which melted in my mouth, while my wife had the tenderloin/hire.

My second time with in a month, unforgettable if coming into Tokyo, the best choice for Tonkatsu, very light breadcrumbs, juicy inside and very soft tender pork, love it very muchðð
