The chef gave detailed and smooth explanations about the ingredients and dishes, so even though it was my first time eating aged sushi, I was able to learn about its specialties and flavors.
They will tell you in detail how the toppings should be aged, the number of days, the aging method, the appropriate temperature, seasonings, etc. The taste is different from ordinary sushi, and you can have a truly luxurious time.
This time, my favorite dishes were sea bream kombujime, tuna, golden sea bream, shrimp, whale, conger eel, etc. All of them were really delicious.
Tuna has always been my favorite topping, but this was my first time eating aged tuna, so I was quite surprised at how different it was from what I usually eat. This is a dish that everyone should try.
Also, the chawanmushi with smoked cheese and ankake truffle sauce was so delicious that even though I was already full at the end of the course, I ended up eating it in silence with my friend. (lol)
