For me, what first caught my attention was it's restaurant name as it stands out.

But the Ramen tasted spectacular! I ordered their Shouyu chicken paitan, but the soup flavor was bold with strong aftertastes of lemon (there was a small lemon slice underneath the soup) giving it the tangy and refreshing taste.

My journey continued at Ramen Afro Beats, Chef Yanase-San's second venture that draws inspiration from the world of Afrobeat music. This time, the beat-making theme is imbued with the rhythmic pulse of heavier drums and percussions, creating a strong flavor that resonated deeply with my musical taste-buds.

The star of the show here was the Tokujo Toripaitan. What truly sets this bowl apart is the innovative addition of the spiced espuma or foam. The spiced elements in this espuma add a unique and exciting dimension to the dish.

As you savor each spoonful, you'll notice the broth's subtle transformation as the spiced espuma gently melds into the paitan broth, creating changes of flavors that can only be described as heavenly. It's a masterpiece that almost feels too good to be legal.

Yanase-San's cuisine is undeniably changing the game when it comes to ramen. Dining at either of his restaurants is an experience that will make you forget everything you thought you knew about ramen. It's a true fusion of music and culinary prowess that will leave you craving more and looking at ramen in a whole new light.

Best tori paitan ramen in Tokyo!

Shop itself has a very stylish interior with about 12-15 counter seats. No English menu.

The soup is incredibly creamy and rich with bold flavors unlike any other tori paitan ramen I've tried. The foam on top gave a nice creamy mouthfeel, and the fresh onions and bit of citrus added a nice fresh taste. The eggs here are also absolutely perfect. The deluxe bowl includes two types of chashu which were both incredibly tender and flavorful (I think they sous vide it)

Seriously stop by here if you are near Shinjuku.
