I was researching various sushi restaurants in Hakodate,
This one looked the most delicious.
It has also received one Michelin star.
We're in a private room with just us.
The omakase (¥19800) I received was,
Grilled Firefly Squid
Sashimi of red shellfish, sole and scallops
Crab rice
Golden sea bream grilled food
boiled abalone
Grilled cherry blossom trout
sweet sea bream soup
Sujiko
squid
Red sea bream
Medium Toro
fatty tuna
Pickled tuna
small skin
sweet shrimp
sea urchin
Kitayorigai
Abalone
conger eel
ball
With the configuration,
There is not a single disappointing story,
Both the knobs and grips are at a high level.
If anything, the knob dishes are more impressive.
Especially the grilled food was really great.
Golden sea bream is gently cooked, and its smooth texture and
The flavor that blends harmoniously with the aromatic condiments is exquisite.
The cherry salmon has crispy skin,
There was no odor at all and it tasted really good.
The abalone is also soft and fragrant.
Both knobs are very delicious.
Other items include pickled tuna rolls made by one of the students.
The small skin and the nigiri of sea urchin were exquisite.
The sake is also great.
Hidakami (super dry, rich Yasuke)
Tsumitsutsu (Asahikawa's sushi specialty sake)
Final crane
I received such things, but
Yasuke specially made by Heiko Sake Brewery for sushi restaurants
The brand Hidakami is
It was a perfect match with the sushi and was blissful.
The only disappointing thing was that the volume was small,
There is no strong emphasis on Hokkaido-produced ingredients.
The taste is definitely top notch,
This is one place I would like to stop by again when I come to Hakodate.
