Yamada

We visited in Dec 2023 after watching a T-Box Youtube video. Tucked away in Todoroki, a bit further out from central Tokyo, Yamada-san's cozy pizza joint with a twist was well worth the visit and will always be in our hearts. The pizzas were made with style and pizzazz and bold flavours was the recurring theme across all the dishes - pizza and otherwise. The wine selections for the wine pairing were also bold and interesting, making for good contrasts against the courses.

This was a highlight of our Japan trip. Thank you Yamada-san!

Excellent dinne. Ever go to a great pizza place and have FOMO because there are so many great looking pizzas but you can’t try them all? This place has you covered by making a pizza tasting menu where they serve everyone a single slice of 4-6 different pizzas, each freshly baked. The appetizers and wine pairing were also excellent and included with the pizza course. Highly recommend.

The restaurant is located on a residential street, a 5-minute walk from Oyamadai Station, and the counter is packed full of live music.It was the first time I had ever tasted pizza as a delicious treat. Not only pot-baked pizza but also homemade terrine and hamburgers! ️It's super delicious, the squid ink pizza and shrimp miso pizza are also delicious, but the ordinary margherita knocks me out.
I would like to ask again if ¥15,000 for wine pairing with this number of items is worth it.

This shop is located in Oyamadai. The exterior just makes you want to enter.
When you step inside, you'll see a custom-made pizza oven and the atmosphere is quite nice.

First of all, I was surprised to get a Margherita as a greeting, but they baked it as a whole piece, but they cut it in half and served it to the two of us. What about the rest? When I asked him about it, he said that when he had a part-time job or someone to take it home, he would give it to them, but then he would freeze it and use it for something else, though he didn't remember.
So, even though there were only two of us, they did their best to bake the food deliciously.It was extremely light and delicious.
The pairing of alcohol goes really well and it's delicious.

Prosciutto mousse and melon jelly This had a surprising harmony.Prosciutto is often served on melon fruit, but I had never thought of doing it like this. The vegetable jelly and many pizzas were all really delicious.
I had never been to the town of Oyamadai before, but this was the kind of restaurant I wanted to visit again.
The conversation with the chef was also fun.

This time, I went to the shop run by Mr. Yamada, who helped me during my time at Lovetto Lada Ochiai!

Mr. Yamada worked as a sommelier at Ginza Lovetto Rada Ochiai during the time of Italian master chef Tsutomu Ochiai.
At that time, I ate Chef Tamaki's pizza at SAVOY in Azabu Juban and was so impressed that I went to Strada, where Chef Tamaki had moved, to train.
After that, he trained at Teatroacca and opened `PIZZERIA IL SUONO SCORRE 22'' at the age of 44.
After that, he closed that shop and opened `Oyamadai Yamada'' last year.

The pizza dough is a blend of two types of strong flour and semi-strong flour.
The wavy shape of the ears was created by Chef Tamaki.

The temperature of the pot is 520℃, and it takes about 40 seconds to bake.
Another distinctive feature of this dish is that salt is added just before baking to add flavor to the bottom of the dough.

Personally, I was hooked on the following:
The pizza with Shimanto chicken and fresh black pepper was the best✨
The combination of the scent of truffle oil and tonnato sauce was irresistible!

As a former sommelier, he has a wealth of wine knowledge.
I think Mr. Yamada is the best at knowing which wine goes well with which pizza.

I think this is a restaurant where you won't be able to make reservations from now on!
