One of the most famous niboshi (dried fish) ramen located in a quiet residential area

Went there at around 6pm on a weekday and there was no queue. The vending machine only accepts cashless payment but it does not accept IC cards (Suica, Pasmo etc); luckily I can pay with cash at the counter

The soup is brimming with the flavour of niboshi and the standard low hydrated noodles go well with the soup. The shop also offers different types of charsiu
Overall, a very enjoyable bowl of ramen

Great Niboshi Ramen, they have 2 type of Ramen : Standard Niboshi Ramen and Niboshi Ramen with Pork Backfat.
If you love Niboshi and thin noodle you can order the Standard one, but if you prefer thicker noodle with milder soup you should choose the Backfat one.
Their 和え玉 is also amazing.

The soup is made with plenty of dried sardines and has a concentrated flavor of seafood.
The natural sweetness and richness of dried sardines create a deep flavor.

Although the flavor of the dried sardines comes to the fore, the balance with the other ingredients is exquisite. It's not too strong, it's definitely the dried sardines that are there!

The scent of dried sardines spreads throughout the soup, giving each bite a wonderful aroma.

The dried sardines ramen comes with special toppings such as char siu, menma, green onions, and flavored eggs!

I think this is the best shop for dried sardines 🍜

There was a wait of 5 people when it opened at 11am on a weekday.
I had a hard time deciding between pure dried sardines and dried sardines, but since I was in the mood for thin noodles, I ordered the special pure dried sardines soba (1,300 yen). I also ordered the squid marinated egg (400 yen).

By the way, the ticket vending machine is cashless only. I think that's a good thing!

First of all, the pure dried sardines soup is the best. It's smooth, but rather than crispy, it's more like a super-dried sardine. It's certainly refreshing in a sense, but the thick sardines make it very filling.
I'm glad I chose thin noodles, not the chewy type, but the flat type (low water content, I guess) that I prefer.
There are 2 pieces of rare pork and 2 pieces of moist chicken char siu. I think the pork in particular has a high level of perfection. If you don't let your guard down, the soup will gradually cook to the same temperature as the soup, which is perfect.
The flavored eggs were average.
I appreciate that it contains chopped onions. The soup is so rich that I thought so. (It's not mushy though)

For the dressing, I ordered squid, which seems to be for experts, but it was still very strong! There's so much concentrated squid paste on top that you can smell it just by mixing it.
When I added a little bit of dried sardine vinegar halfway through, it gave it a nice refreshing taste and made it even more delicious.
Next time, I would like to try the dried sardine oil version or the chicken oil version of the dressing!

Also, there seems to be dried sardine mazesoba on the main menu, which I would like to try someday.
It's a shame that it's not close to my habitat, but I'll definitely come back someday 🍜
