This shop, located just around the corner from Sugamo Jizo Street and the Sugamo Post Office, is actually an independent shop that served Shirakawa Ramen after training at Watanabe in Takadanobaba for two years. I've always liked this store, so I decided to give it a visit.

I ordered the special wonton noodles for 1,500 yen. In conclusion, this is the ultimate ramen. Although it looks like a very orthodox style of ramen, I felt that the soup, handmade noodles, wontons, and char siu pork were all very well-made, without any of the weak flavors that tend to be found in muka-cho restaurants.

The chicken-based soup is very mellow and light, but has a strong richness, and there is no bad aftertaste that you would expect from Mukacho, so you can easily drink it.

The hand-rolled homemade noodles with added water are extremely smooth and have an irresistible texture that explodes in your mouth.

Apparently, the wonton skins are stretched by themselves, making them very smooth. Since there is a lot of bean paste, the boiling time is longer to cook through the middle, which tends to cause the skin to become soft, but this was not the case at all, and the boiling was just right.

The chashu is made from the softer parts of the thighs and shoulder roast, and while it has a slight aroma and chewiness that only comes from hanging grilling, it's never too tough. For a special dish, charcoal-grilled chicken thighs are also added.

I heard that you quit your job after turning 50 and started working in the ramen industry, and I'm really proud of the fact that you're able to make all of this quality by hand all by yourself. Although the 6-hour business hours are quite demanding even though there are only 2 days off per week, this is one of the stores that I would like to work at for a long time without damaging my body.

The soup has a density somewhere between rich and light, and the flavor of the chicken is strong. The noodles are medium-thick, curly, and chewy, yet chewy and delicious.
The wonton skin looks like it's homemade, and the ingredients are soft and go down easily.
I am satisfied with the delicious ramen I received in the morning. Thank you for the meal!
