An incredible experience, very intimate small setting, the service & staff are impeccable! The chef is a Master artist, and very kind!! The food was BEYOND! if you are foodie GO HERE! worth every penny. Every bite was wonderful

My first night at Tokyo was turned a super nourishing and satisfying one because of Umi. Great sushi, friendly service, wide range of sake! Will come again for sure

Edo style sushi at the peak of Tokyo sushi. If you’re coming here, you should know your stuff already, so won’t go through the basic details. The things I noticed that UMI does different:
- more vinegar forward on the Shari, slightly sweet and softer rice.
- LARGE neta, almost too large (if there is such a thing). The kuruma ebi could hardly fit in one go. It was cut into 2 for the ladies.
- the tare used to finish nigiri had an aged Smokey flavor. Didn’t enquire further, but it’s the first I’ve experienced.
-tamago to finish was slightly sweet and has less of a shrimp flavor than most I’ve had.
Went in May, so seasonal neta included: botan ebi, kuruma ebi, aori-ika, conch, aji, + usual (maguro trio, kin medai (not peak)) and others. Small amount of otsumami before nigiri.
Not cheap. Was about 800USD all-in. Chef gave us nice chopsticks as omiyage. Nice touch.
