Installation Table Enso L'asymetrie Du Calme

In March 2023 I spent three weeks in Tokyo, Kyoto and Kanazawa. This meal, and my meal at Ryo-sho, were the absolute food highlights.

"Inventive" is one of those words that can signal trouble at a restaurant - much foams, many dry ice, so inventives.

This is not that. It is inventive in so many ways - interesting plating, interesting combinations of flavours, but all with the aim of making food that tastes good.

The service - impeccable. The wine list - world class. The list of other beverages, like ginger ale and blueberry juice - delightful.

The food - oh my, oh my, the food.

In the words of the Michelin peoples, "exceptional cuisine that is worth a special journey". Just so damn good.

For our grand finale in Kanazawa, we scored a difficult reservation at another undiscovered gem that will surely be Michelin starred soon. Installation Table Enso has only 3 small tables (10 total seats) that surround an open kitchen. The cuisine is completely different -Kaga (Kanazawan Japanese) French modern with a Nordic influence and a focus on local fish. Each fish was often enhanced with beef, pork, vegetable infusions, foams, textured accents, and more. The dishes themselves were works of art for all the senses . Plating is gorgeous and whimsical , flavors and textures are balanced and sophisticated but yet playful. This was up there as one of the best restaurant experienced I have had, including many 2 and 3 star restaurants. I wish I could properly describe all the dishes but between the language barrier and obscure ingredients most will remain a mystery. #thefoodietraveler #kuishinbo

Small restaurant only catering 10 people; a hidden gem.
Every staff was very focused at the food preparation. The service was excellent. When it comes to food, we were surprised with the creativity, the presentation, and the taste. It’s simply a demonstration of how to transform every dish into an art piece, with dedication to excellence and attention to fine details.
