Kataori Description
Located in Kanazawa, Kataori is a renowned Japanese restaurant that has been awarded the prestigious Tabelog Gold Award in 2024 and has been selected as one of the top 100 Japanese restaurants in the West region in 2023. What sets Kataori apart is its commitment to sourcing the finest ingredients from the mountains, sea, and local suppliers. The owner, Takuya Kataori, personally scours the countryside and fishing ports to find the best ingredients, from luxurious delicacies like matsutake mushrooms and snow crab to lesser-known mountain vegetables and seaweed.
The culinary philosophy at Kataori revolves around the concept of 'subtractive cooking,' where the focus is on bringing out the natural flavors of the ingredients using minimal seasoning. The dishes are prepared with the purest water from Noto and the highest quality dashi, resulting in a clean and refined taste that showcases the richness of Ishikawa's local produce and the depth of Japanese cuisine.
The restaurant's interior reflects the same aesthetic of simplicity and elegance, creating a serene and inviting atmosphere for diners to enjoy their meal. Whether you're a connoisseur of Japanese cuisine or simply looking for a unique dining experience, Kataori is a must-visit destination that will leave you with a newfound appreciation for the art of Japanese cooking.

When I counted, I visited 29 times in total ðð©·
I go back to Kanazawa for meals almost once a month.
No matter who you bring, you will always be warmly welcomed, and if you like food, this is a wonderful restaurant where everyone can enjoy and be happy.
I can't post often, so I'll post photos from the first day of business in January this year and last December ðž
