Ramen Shingen

Ramen Shingen, this is absolutely the best Ramen I have tried in my life. Obviously there are very tasty ones in Singapore but many of them add too much salt into the broth and you will feel thirsty after eating.

I've always felt that in Singapore the ramen shops have become unorthodox and use non traditional methods to amplify the flavor of it's broth.

The ramen at Ramen Shingen did not feel this way and somehow retained it's flavour. The miso pork broth is rich and tasty. It's noodles is not too hard or soft, and is springy. The leek or onion garnishing adds on to it's aroma.

Truly amazing!

This ramen shop feels authentic and they have the process down well for queing, ordering, waiting and then serving you the food just after you sit down.

From arriving on a Tuesday near 2pm, it took nearly 55mins before we were seated with food.

It appears that they turn over the entire counter at the same time for the next lot of waiting people, so we unconsciously felt we needed to hurry and finish at the same time as everyone.

We ordered the shinshu ramen (tasty miso), which was delicious and as you expect, quite on the salty side. The noodles had a slight bite to them which I enjoyed.

Was on the way to another ramen joint nearby however passed this place and decided to come here instead. It was about 6:40pm on a Thursday night and there was about 8 groups in the line outside in addition to the ones seated inside that were also lining up. Took exactly one hour before we were seated. Order was taken while we were in the queue (English menu available) so within 5 mins of sitting down we received our food. We ordered the miso ramen, spicy miso, fried rice and gyoza. We also added butter, corn and egg to the miso ramen, and corn and egg to the spicy one. The miso broth was one of the best I’ve had and the gyoza and rice were very nice too. Highly recommend and definitely do not regret the last minute change of plans to visit this place!!
