One of the ramen shops that became a hot topic in Kyoto this year. It seems to be run by the owner who honed his skills at Touhichi, a popular restaurant in Kyoto.

A friend recommended salt ramen, so I ordered the special salt ramen. Basic salt ramen with added toppings.

Although it's not a particularly rare type of ramen these days, the homemade noodles and soup are really delicious and can be tailored to your taste. The char siu and wonton toppings are also exquisite, especially the char siu pork belly.

The young owner and hall staff are very friendly, and the interior is bright and clean. The default price is 1000 yen, and the special price is 1500 yen. Next time I want to try the soy sauce. When I visited the store right after it opened at noon, it was still empty, but people started arriving at once. But it doesn't feel like there's a line outside.

The bowl is filled with chashu pork, wontons, seasoned eggs, seaweed, white onions, and mitsuba.

The soup seems to be based on chicken such as free range chicken and pork, and the sourness and saltiness of the soy sauce is just the right amount of refreshing yet deep flavor, and the generous amount of chicken oil adds to the flavor and taste. It gives it thickness.

The noodles are made from flat, thin noodles that have a supple body and a good crispness.

Two types of chashu are used: the pork thigh is soft and light, bringing out the flavor of the meat, and the pork belly has the sweetness of the fat and the flavor of the meat.

The wontons were filled with filling and had a satisfying texture, and the soup blended into the skin, making it smooth and delicious.

This store opened in September 2023. South side a little west of the Kazuno-oji and Shin-Nijo-dori intersection in Uzumasa Yasui. From Tenjingawa-dori, the Life Uzumasa store is on the east side.
There is no parking lot at the store, so use a nearby coin parking lot.
When it first opened, it was only open for lunch, but in December 2023, it was open on Wednesdays, Thursdays, and Fridays at night.
The restaurant had a bright atmosphere, and there seemed to be seating at the counter and at the back, which was one step up.

"Soy sauce ramen"

Plump seafood and mellow soy sauce combine to create a wonderful soup that will tell you everything in the first bite.
The richness and umami that spreads in your mouth and the long-lasting aftertaste are unbearable.
The elegant appearance of the medium-thin noodles is glossy and goes down easily.
Another famous restaurant has opened in Kyoto with its carefully crafted ramen, courteous customer service, and good atmosphere.
