The sushi chef practiced at the GINZA KYUBEI. It is a famous sushi restraunt in JAPAN and WORLD WIDE.
You can eat the authentic sushi at affordable price in KYOTO. The sushi chef is polite about his work. Sushi's ingredients are all fresh. If you come to KYOTO and want to eat the authentic sushi, you should go there.

The couple who run this gem are absolutely lovely. The quality of the fish is outstanding. I loved the attentive little details of excellence, such as the generous portion of freshly grated wasabi and the creamy delicious matcha. I was wearing a white t-shirt and the chef suggested that I use the ginger to paint the nigiri with soy sauce (instead of turning the nigiri upside down and dipping the fish in the soy sauce, which could potentially splash). The hours of operation are easy to misunderstand. I think they are open for dinner most nights but only open for lunch on Fridays or something like that. I would sleep on their doorstep if I could!

Brilliant sushi and sashimi. I had the chirashi, and it was delicious. The chef is very friendly and polite. He made us feel very comfortable as non-Japanese. The red miso soup was wonderful!

This restaurant sets the highest of benchmarks for Sushi anywhere and that's not just my opinion. My daughter in law is a Japanese national with a real love for, and appreciation of Sushi, and she was taken aback by the quality, subtlety and craftsmanship of the 14 piece sets we were blessed to enjoy.
